Happy Friday! I’m excited to be joining in my first Life In Pictures Link Up. Yes, I know I just did a WIAW Link Up – but while I’m on a roll, here’s another one. This is a little different – it’s not all food. It’s just a glimpse at a day in my life – with NO WORDS … or maybe just  a few words because you know I can’t just not say anything.

This was my Monday. It included a chillier than usual day, a run in the morning, a “catered” breakfast at work, the start of our office step challenge and of course some work and a walk (hey, I’m in a step challenge!).

And that was my Monday. How did I do for my first Life in Pictures?

Triple Chocolate Chip Ginger Cookies

I think I’m a gingeraholic. Here are a few signs I’ve noticed:

  • Nearly every night I drink a cup of ginger tea with honey.
  • I love ginger candy. Especially this kind 🙂 (HINT I love surprise gifts …)
  • When we get sushi, I tend to ask for extra ginger. (unless B is there, then I just eat his)
  • Dried ginger? Candied ginger? Crystallized ginger? I have to have it.

So when I got home last week from a shopping trip and found myself with two small ginger-roots PLUS a tube of minced ginger, I wasn’t surprised. But – what to do with all that ginger?  I made some stir fry dishes, curries, etc. but I wanted to bake something. Surprised? I’m not. But when I searched for ginger recipes (including the ginger chocolate biscotti recipe B loves) I was surprised and disappointed that I couldn’t find ONE that called for fresh ginger. They either called for powdered ginger, or candied ginger (which I know I could make … but I wanted to bake right away!). SO I decided to sorta create my own recipe, using fresh ginger. I was able to combine a few other recipes and ideas (a lot of the ginger cupcakes/cookies/etc. recipes called for molasses with their candied ginger) to come up with these. And I think these came out FABULOUS.  Even B, not a ginger fan, enjoyed them! trip chip ginger cookies - i crashed the web Triple Chocolate Chip Ginger Cookies Here’s what you need:

  • 3/4 cup brown sugar
  • 3/4 cup white sugar
  • 1/2 cup butter (likely one stick), room temperature
  • 1/4 cup dark molasses
  • 2 eggs
  • 2 1/4 cup flour
  • 2 teaspoons ground ginger
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 tablespoons fresh ginger, finely diced
  • 1/2 cup semi-sweetened chocolate chips
  • 1/2 cup semi-sweetened chocolate chunks
  • 1 cup white chocolate chips (feel free to use more regular chocolate or even dark chocolate if you’re not a white chocolate fan. I LOVE white chocolate and loved the chips with the ginger!)

Here what you do:

  1. Preheat your oven to 350 degrees F.
  2. Cream together the sugar, butter and molasses. Add in eggs, one at a time, and beat until well mixed.
  3. In separate bowl, combine dry ingredients: flour, ground ginger, baking soda and salt.
  4. Combine creamed mixture with the dry ingredients.
  5. Stir in the diced fresh ginger, chocolate chips, chocolate chunks and white chocolate chips.
  6. Let batter sit for 30 minutes to 1 hour in your fridge. Can’t wait? Sometimes I just let it sit in the freezer so it hardens – I believe this helps prevent the batter from spreading out when cooking
  7. Drop the batter by the teaspoonful onto a cookie sheet lined with parchment paper.
  8. Bake for 10 – 12 minutes or until edges start to brown.
  9. Enjoy!

WIAW #16: B Cooks For Me …

Surprise- not only is it National Running Day, but it’s also time to talk about another one of my favorite subjects – food! That’s right, it’s  What I Ate Wednesday! These were my eats from YESTERDAY, because that is when I remembered to take photos. I really need to start taking photos on a different day of the week.

Basically as I’m typing this, I realize how lucky I am. B makes me soooo much of my food. It’s not that I don’t enjoy cooking or don’t know how to cook – it’s frankly because some days I’m just too crazed to think about cooking/eating/etc. and B takes care of me. So not to be overly gushy, but I can’t help write this post without acknowledging that. Anyway, breakfast included egg whites with hot peppers, spinach and frozen veggies. B made me the breakfast at home and I brought it into the office – and plated it – so I could eat this delicious meal at my desk.

This week is our office’s Wellness Week so for lunch we had a salad bar potluck! Each person in our office contributed some ingredient for a salad and we made our own salads at lunch. BEST IDEA EVER. Check out my delicious salad- there’s feta cheese, blueberries, spinach, mixed greens, craisins, hard boiled egg, tomatoes, a few bites of chicken, chickpeas, carrots, cucumbers, and beans. No dressing – I’m weird like that. And served with an apple!

Snacks the day included baby carrots, a nectarine and perrier, a handful of cashews and wintergreen mints.

Dinner was great, as usual. I fully intended on making dinner but some client work popped up unexpectedly so after I started to chop up veggies, B took over. He made some pork from the West Side Market, cauliflower and broccoli.

Yum! I was going to end the day with an Arctic Zero sundae, but I simply was too tired to do so.Yup, too tired for dessert … it doesn’t happen often, but it happens!

Happy [Almost] National Running Day! 10 Running Confessions

Tomorrow is National Running Day. So in honor of the [almost] holiday, here are 10 running confessions. After writing these, I now realize how slightly crazy I am.

Runners are indeed crazy. How many of these confessions can you relate to?

1. Stay away from me on days I don’t run. Day when I don’t run are really really really difficult. After getting injured, I know it’s important to take days off – but in my world, days off are on the elliptical or a long walk. You do not (I repeat- do not) want to be around me on days when I have no activity at all.

2. I’ve gotten used to porta potties, thanks to races. I realized this a few weeks ago when I was hiking with my family and the only bathrooms in the camping area were outhouse-like and I thought to myself, wow this is better than a porta potty.

3. I will wake up at an ungodly hour to run or get in some sort of workout. Especially if I’m traveling. When we went to Asia we had to be at the airport by 6 a.m. Meaning I woke up at 3:55 just to get in a quick workout before our super long plane ride.

4. [Warning, slightly gross] It has taken me years but I can finally run and spit – yes, I’m successfully not spitting on myself! But sadly, I have not yet mastered the running/snot rocket thing yet.

5. Whenever I see someone running and I’m not (I’m at work, in a car, etc.), I immediately feel jealous and guilty like I should be running even if I already worked out that day.

6. All NIKE, Gatorade, UnderArmour, [insert other brand here] running commercials give me chills. And then I must immediately go find them on YouTube and rewatch them over and over again.

 

7. Since getting injured training for my first marathon, I have no desire to do that again. I may be scared – or just stubborn – but I may never do a full.

 

8. I wish I had more running friends because I just want to travel to all the races and spend weekends seeing new cities and doing new half marathons. Who’s in?

9. I wish running were totally normal to do all the time. Like, as I’m walking places I often think that it would be so cool if we all just ran everywhere and nobody looked at us funny. How more efficient would it be if I could just run to all my meetings or run to dinner with friends? Or what about running meetings – instead of sitting all day, I’d love to have a running meeting or two.

10. It’s taken me about seven years (yes seven) to consider myself a runner. Have I run a full marathon? No. Am I fast? No. But I’m still a runner 🙂 (see 1-9 above)

Pretty Good Weekends Are Made of Patios, Pancakes, PR, Parties

Friday night started with a patio dinner and a movie with B – Pitch Perfect 2.

B and I split two entrees – their chopped salad and a club sandwich. I think outside of getting Chinese food, this may be the first time B has agreed to split food with me! It made my night. It’s the little things, right?

Saturday morning started with an easy 2 mile run and then the 5k fundraiser for an organization that B and I volunteer with on occasion – the West Side Catholic Center. It’s a fun 5k around Ohio City with a pancake breakfast after the race. The official times aren’t up yet, but I’m pretty sure I got a PR, too! We walked home and enjoyed a pretty picturesque view along the bridge.

During the afternoon we headed to the West Side Market to pick up some produce for the week. And then for lunch, we decided to try out a new cold pressed juice and food place – I got an acai bowl with coconut, almond butter and granola and B got the watermelon mint juice. SO good.

Saturday night, B and I met our friends Dave and Anson for some patio drinks at the Hofbrauhaus, and of course a giant pretzel. We ended the night with a party for one of our friends who was turning 30.

Sunday was a nice day of prep and catch up – I had pizza for breakfast, got in a lazy workout, tried to catch up on work I had neglected this week, painted my nails, did some meal prep and watched a few episodes of Girls.

We ended the day with dinner at my in-laws. They had just returned from Germany, so our meal centered on German specialties, including pork and potato pancakes!
