WIAW: Typical Office Eats

Welp, as I mentioned, I’m back at work from maternity leave.  Which means – back to my typical office eats. Every day is somewhat different, but for today’s What I Ate Wednesday, I wanted to share a pretty typical day of food and snacks when 99% of the food I ate that was at my office. Here are last Thursday’s eats!

Breakfast was oats – I’ve been on an egg kick lately, but B was traveling for work and didn’t have time to make me eggs and since I’m lazy, I made some egg white oats and topped it with banana and mixed nuts. They were SO good! I love egg whites in my oats heated up – they fill me up longer AND take on a custardy type texture.

Lunch is not that pretty looking but it hit the spot! A ton of roasted veggie s(squash, eggplant, onion, zucchini) and some ground chicken gyro meat that was leftover from dinner. All on top of some spinach. YUM.

Dinner was one of my favorite quick and easy meals – roasted veggie hash topped with a runny egg. I need more easy quick meals in my life!20161006_182547

And of course, dessert. Arctic Zero Vanilla Maple topped with some chocolate chips, chocolate wafers and PEANUT BUTTER. There was more peanut butter on the bottom too.20161006_200221

That was it for my What I Ate Wednesday eats! I headed to bed literally right after my dessert and conked out. I’m so tired now that I’m back at work. Between running, working, and not sleeping (FW is still waking up 1-2 times a night to eat), I’m not sure how my brain is functioning most days.

WIAW: An unintentional veggie day

Happy Wednesday. Thank goodness, we’ve made it halfway through the week AND it is What I Ate Wednesday!  These were my eats from yesterday- it ended up being a vegetarian day, by accident.

Breakfast was a leftover decaf latte from Saturday (I had a free Starbucks reward expiring that I had to use)  .. and as usual, I didn’t finish it. I’m awful with drinking coffee!) and overnight oats. I’ve been back on the anti-eggs phase lately but loving my overnight oats.

Lunch was this delicious veggie medley – veggie burger, sweet potato, zucchini, avocado and some leftover starry cabbage and asparagus.

For snacks, in the afternoon I had some dried fruit/nuts and fresh fruit salad. And some caramels – I just bought a package of Nips and they are so good!20160412_132420 20160412_140218 20160412_154127

Dinner was a thai-inspired broccoli, pepper, edamame, avocado, peanut salad. I also had a few slices of cheese (not pictured).20160412_195745

I also made a batch of granola up for snacks. And of course aid a bunch of that along with the ice cream. So double the oats today!

And that sums up my day of eats from yesterday. Now, some questions for you:

  • Do you ever accidentally (or on purpose) go meatless?

Weekend Update: So Long, January

Well, January is gone. And it was a great month. B and I spent a week in Mexico City. I celebrated my birthday. I did some runs. And now, February is here!

We had a great weekend to close out the month. I spent half the time in Columbus, celebrating a cousin-in-law and her upcoming baby, got in a few runs, enjoyed some seasonably warm weather and even relaxed. Not a bad first weekend back in the country!

Saturday morning started with a 4.78 mile run in Columbus. Actually ended up running TO a restaurant for brunch, which was awesome.

Saturday night we got back pretty late, so the evening included some fruit and TV watching. 20160130_203748

And by TV watching, I mean watching the Sebastian episode of Comedians in Cars Getting Coffee. Which was awesome. I’m a big fan of Sebastian Maniscalco and his comedy (B got me hooked on the Pete and Sebastian podcast and we’ve now seen him a few times live).

Sunday morning included ANOTHER outdoor run. That’s right – two in one weekend (if you’re counting). This time it was mid 50s and I wore capris. On Jan. 31. See my new shoes?? I love them!

Without our usual Sunday dinner plans, we opted for Italian. So Sunday afternoon included some sauce making. And meatball making. I can’t take credit – B actually made the meatballs. But I helped roll them!

WIAW #33 – Notsomeatless Monday

Goooood morning and happy WIAW. This What I Ate Wednesday post was Monday’s eats. Yum yum.

If we’re being honest (and that’s what WIAW is all about right?), I would tell you that I had fully intended to have a complete Meatless Monday. It’s been ages since I did, and I had plans to fill the day with vegetarian goodness. I was going to meal-prep on Sunday and have an amazing Monday (and other days this week) of eats.

Sunday meal prep didn’t happen. We did make it to the West Side Market but since we had walked there, we only picked up a few items. And then we watched the Browns game and went to B’s parents house for dinner so productivity went out the window (full weekend recap is here).

So here you go. A not-so-Meatless Monday for What I Ate Wednesday (are you still following?).

Breakfast started with egg whites with hot peppers and some pepperoni in the eggs. B makes my breakfasts and surprised me with the pepperoni (leftover from our pizza night Saturday). So I guess you could say I was doomed for my Meatless Monday from the start? It was very delicious, though AND had some great veggies on the side.

For lunch, I had no groceries. (see above – no meal prep and not much food from the Market …) SO I opted to take a walk with some coworkers to one of my favorite and most-underrated downtown lunch spots – Stone Oven! I picked up Janea’s Salad, which is my favorite. I know I’ve shared it before. It’s chicken, feta, roasted red peppers, sundried tomatoes, croutons, tabbouleh and great dressing and bread. It is a hearty salad and I ate the entire thing over about the course of 2 hours in between and during meetings. And yes, there was chicken so again, not-so-meatless.

For dinner, I finally got my act together and hit up Heinen’s on my way home from work to pick up some supplies and I made a vegetarian curry dish. It was really good! I stir fried some veggies (green beans from the local farm stand, onion, pepper, sweet potato and carrots) and topped them with a green coconut curry sauce and mixed in some freekeh. I’m definitely going to be sharing the recipe soon – so easy and so good. I even had enough for leftovers for lunch the next day!

No day is complete without dessert. For dessert I made myself a mini ice cream sundae with vanilla maple Arctic Zero. I topped it with some chocolate and white chocolate chips, as well as some peanut butter and a bite of a Take Five.

And that was it! A pretty good Monday – even if it didn’t end up being meatless after all.

WIAW #15: Another Meatless Monday

Happy What I Ate Wednesday! These were my eats from this past Monday, which was the day after the Cleveland half marathon and for some reason I was STARVING that day. I managed to be busy at work/etc. so I didn’t have as much time for snackage as I would’ve liked. But let me tell you. Starving.

It was the day after the race, so I kept it easy with my workout – a reallllly easy slow elliptical workout and then a walk on the treadmill to get my legs moving. Boy, my quads were tight! I was hungry by the time I got in around 8. I scarfed down the breakfast that B had made for me – and guess what – it’s different than last week! NO egg whites in our house (sad face :() but instead a veggie burger, spinach and frozen veggies. I also had a clementine.

WIAW #12 : Donut Day!

I can’t believe I’m already on my 12th What I Ate Wednesday post. It seems like yesterday was just my first one and now I love them. I just LOOOVE seeing what everyone is eating, getting inspired for some new eats, and documenting my own.

This WIAW features last Thursday actually. Why? It was a busy day. I worked late, didn’t have time to make dinner, and ate a dinner that B made for me and left out while he was at volleyball. But it ended up with some dessert –  woohooo! Because that’s how my Thursday was.  

 

I did about 55 minutes of the elliptical before work and was hungry by the time I got in around 8. I scarfed down the breakfast that B had made for me – egg whites and frozen veggies. Yup, the usual.

At around 9 a.m., all of these GLORIOUS donuts arrived in the office. I have a confession – I’m not a huge donut fan. I do love some apple fritters, however. Anyway, someone ended up cutting one of the glazed ones in half and then in quarters so I had a quarter of one. The picture of the quarter donut didn’t look as good – so instead, look at ALL THOSE AMAZING DONUTS.

For lunch, I hadn’t had time to make anything (again, busy day), so I grabbed something from my freezer. Surprise! It was some black bean butternut squash chili I had made (recipe here). It was so good.  Better than it looks, I promise!

With my chili, I had a clementine and half a bottle of the Gingerade Kombucha. This is my favorite kombucha flavor so far – so yummy!

I ended up having to work pretty late, so I had a protein shake also around 5-ish, knowing I wouldn’t be home for dinner for a few hours. Gotta love the Biotrust low carb vanilla! #ShakeSelfie Oh and LOVE that it’s light out so late now!

B made me dinner even though we didn’t get to eat together! I got home to a plate of salmon, broccoli, shallots and boo chou. It was SO good and I even had some leftovers for the next day.

I decided to make myself a sweet concoction for dessert – introducing Arctic Zero, PB2 and peanut butter, honey, white chocolate chips and a few peanuts. I reallllly enjoyed it.

WIAW: Sunday! (Cake for Breakfast)

I decided to switch it up a little bit this week – I’m sharing with you a day of Sunday eats! I typically share a weekday post but guess what – I remembered to take food pics on Sunday!

I woke up fully intending to have a great breakfast of eggs and beans – and B was ready to make it of me! – but somehow ran out of time and only had 15 minutes for breakfast before my Sunday morning plans, meeting Nicole for a walk and tea. Oh well. That meant breakfast was quick – but still delicious! I had made lemon cake Saturday so it sounded perfect for Sunday breakfast. IMG_20150329_164012 Then it was time to meet Nicole. We took a nice walk and enjoyed a pot of tea while we caught up. She just got back from Australia so it was awesome to hear some of her stories. That’s my favorite from Cleveland Tea Revival – ginger turmeric.

I got home about 1 p.m. and was starving. Guess lemon cake doesn’t fill you up? I luckily had some leftovers from Friday night waiting for me. Note – I forgot to take a photo of it on Sunday, but here’s the photo of my veggie burger on Friday. I had about half leftover.

And with the veggie burger I had some more veggies! I did some meal prep and ate some of the veggies I was preparing – spinach, brussels sprouts and some additional frozen veggies. Oh and this new flavor (for me) of La Croix. Pretty yummy!

Sunday dinners are typically with B’s family, but I had to work and we had tickets to see a final movie at the Cleveland International Film Festival, so we had a quick dinner planned. Below – my concoction from the Heinen’s salad bar. I assure you it was really good and about 1.3 lb. of food. #notashamed

WIAW: Sick Day Eats

I wish I had a more exciting WIAW Wednesday post to share. You know, a post that includes peanut butter cheesecake cookie dough blondies (yes these exist), homemade granola, this gnocchi and sausage soup and more of what I’m craving as I type this.

But alas, I had a sick day Monday. I woke up with a fever and achy. No stomach issues (I rarely get stomach sick), but super tired, feverish, a bad headache and sore. So what do I eat when I’m not feeling well? Here’s a sneak peek in today’s WIAW!

For some reason egg whites and veggies didn’t sound like they would hit the spot in the morning, so I opted for a pretty large bowl of Special K that took me about an hour to eat. It was probably close to two servings, so maybe that’s why it took so long? Oh, and yes – I eat it dry. I don’t like milk in my cereal.

I slept through lunch so I had a snack around 3 p.m. I started with some peanut butter and half a sweet potato with some caramels. I ran out of the homemade ones so had a few (more than just the one pictured – I had 3) ones from my cabinet.

Then an hour later I had another half of sweet potato with honey and cinnamon. Still my favorite snack.

B said he’d make me dinner and I napped again throughout the evening until dinner at around 8 p.m. B made some veggie burgers (my favorite – Luna!) and salads which somehow hit the spot. Oh, and yes, I also had some Arctic Zero. About 1/3 a pint #notashamed

So that was it! That’s what I ate on my sick day. Apparently I’m still hungry AND I crave comfort food as you can see – gotta have my ice cream, caramels, peanut butter, honey and sweet potato on my sick days!

WIAW: Leftover Chinese Food

Once again – here’s a look at my Monday eats from this week. Enjoy this edition of WIAW!

Monday’s breakfast may look familiar. That’s right – once again, I had egg whites with hot peppers and frozen veggies. And B made it.

Sadly, we had no more leftover spaghetti squash to enjoy – I thought I did but after tasting it I noticed it was bad (ice) so it was just veggies and egg whites. Oh, I also had some coffee again!

Lunch was leftover Chinese food! B and I had FEASTED at Wonton Gourmet in Asiatown on Saturday night, getting lomein, szechuan fish, Chinese broccoli and more. Thankfully we had leftovers of my favorite – the fish and broccoli.

Homemade caramels – I made them over the weekend at my Ladies Craft Beer event and they are SO DELICIOUS.

For a Meatless Monday dinner I made some sweet potato zucchini hash with tofu. Yup, more sweet potato. YUM- I topped with cilantro.

WIAW: Case of the Mondays = Cookie for Breakfast

I decided to switch it up a little bit this week – I’m sharing with you Monday’s eats for this edition of What I Ate Wednesday. I typically share a Tuesday eats but guess what – I remembered to take food pics on Monday!

Full disclosure: Today (Wednesday) I’m going out to eat for dinner and likely having chips and guac, tacos, margs and dessert. Sorry you’re stuck with viewing pictures of zoodles (and some treats) instead of Mexican 🙂

Monday morning I started my day with a cookie. That’s right – a cookie. I ran before work and was hungry before I even had a chance to make breakfast (B had to pick up his dry-cleaning so I made my OWN breakfast!) so I had a butterscotch oatmeal coconut cookie bar. Delicious! And there’s oatmeal in them so it’s totally a great pre-breakfast treat.

When I got to work, I had my egg whites and veggies – this time a mix of spaghetti squash and frozen vegetables. Oh, and coffee with cinnamon. I don’t drink coffee daily, but when a colleague puts in Vietnamese cinnamon AND it’s Monday, it’s hard to resist.

Lunch was a mix of leftovers from our dinner out with my parents on Friday (salmon and lentils – both my mom’s and my leftovers) and some roasted broccoli and tomatoes I had prepared on Sunday.

And for dinner – I made some shrimp scampi-type dish with zoodles! I don’t know what is officially in shrimp scampi, but this was sautéed onions, garlic and shrimp over zoodles with some peperoncino flakes and fresh basil.
