First Father’s Day Weekend

First off, Happy Father’s Day! To all the dads out there – especially my dad – thank you for all that you do.

AND, of course, B. This was his first official Father’s Day!

Our Father’s Day weekend included:

A bunch of this … yes, the little man is somewhat eating real food these days!

And when he eats, we also do. Some Vietnamese food to kick off the weekend.

The weekend also included some outdoor runs. We got in 3.25 miles with the stroller at the park. The beach was looking great!

Saturday afternoon, B and I got some oysters at Heinen’s. They were sooooo good – I was surprised that I liked the Virginia ones so much; I’m usually more of a fan of New England oysters.

And for dinner, B made homemade pasta for shrimp scampi. I love homemade pasta.

Sunday morning started early, since I got up with FW while B slept in. We made French toast and then I got in a HOT run. It was 80 degrees out!

That afternoon, B, FW and I went for a walk to the lake.

Then, we headed out for some Father’s Day kickball. We missed most of the game because FW was sleeping but still got to enjoy a few innings.

And that night we enjoyed some steak, potatoes and ice cream for B’s family dinner. B’s parents got a new swing and FW had a great time breaking it in!

Busy Winter Weekends (One Sentence Per Photo)

Phew, what a weekend! From a Cavs game to a wedding shower to hanging out with cousins to an ice festival to running to dinner with friends, let’s just say it was a pretty busy weekend.

WIAW: Back From Maternity Leave

Last week I went back to work after taking off 3 months of maternity leave. It was one of the hardest things I’ve ever had to do and I was so surprised that it was. I was an emotional wreck. After spending 3 months with FW, I could barely think about leaving him all day. I may go into those emotions more in a future post, but for now, it’s  What I Ate Wednesday! And here are my eats from my first day back at work, last Thursday.

But first, here’s a pic of FW all dressed up for his first day of daycare. It’s from my Instagram account (@koskim).

Anyway, breakfast was B’s specialty! He made me egg whites, spinach and tomatoes and I packed it up and brought it into work. It was nice to be back eating at my desk and an old staple.

Lunch was a whole bunch of roasted veggies I had prepped a few days earlier and some grilled chicken, all on top of some spinach. Plus some avocado. It was so good and hit the spot. 20160929_132638

Snacks during the day included an apple from our apple picking adventure, a PB&J muffin AND some nuts. You can see some pistachios AND these delicious pumpkin spice almonds that my coworker shard with me. I love pumpkin spice flavored things!!20160929_144747 20160929_152453

Dinner was right from the freezer. I knew I’d be too tired (emotionally and physically) and drained after my first day back to think about dinner so I had taken out some Skinnytaste Late Summer Enchilada Pie from the freezer and paired it with some more spinach and roasted zucchini. This dish is my FAVE and it freezes well! SO happy to have some freezer meals these coming weeks as I get back into the groove of work and figure out how to balance little sleep, running and a newborn. Yikes.

That was it! I almost had some ice cream and leftover french toast for dessert, but I honestly was too tired to move off the couch and open the freezer. I passed out around 8:30 p.m. – a record for me!

WIAW: All By Myselffffff

Okay the title is a little bit of a misnomer. But here are some eats for last Thursday, when I ate all of my meals – that’s right – by myself. Okay, not REALLY by myself – this guy joined me .. but I was the only adult at each meal I ate for the first time in a while. So here is what I ended up eating for today’s  What I Ate Wednesday!

For breakfast, B and I got smoothies at Restore. I know- I said I ate alone. But I did – I ate it while BF’ing FW. We also got coffees –  my iced coffee from Phoenix was delicious – but it took me about 3 days to drink it …

I had lunch while FW was napping and made myself some egg whites and cheese with leftovers from dinner – sweet potato, zucchini and pepper hash. It was delicious – and again, eaten alone.20160811_132538

I had plans to meet up with a coworker, his wife and their new baby for an afternoon drink and opted for white wine. Yes, it was social (with other people) – but no food (minus a potato chip or two that was on the table) was really consumed.20160811_170112

B had after work plans – an event and then the Indians game – so I was on my own for dinner. I stopped off at the Heinen’s salad bar and picked up this.  There are some more tortellini, quinoa and other goodies under that lettuce.20160811_181627

I heated up some soup my mom had made and brought when she visited to go with my salad – chicken and pasta.

That was it! A pretty good day of eats by myself. Disclaimer-  some days when I eat alone all I manage to eat are spoonfuls of peanut butter, ice cream and handfuls of cereal because I’m holding FW with the other hand all day.

WIAW #26: Sundaes on Saturday

Happy What I Ate Wednesday, folks. It’s one of my favorite days of the week – seeing all the great eats that everyone has to share, plus sharing my own. AND today’s is an especially fun day of eats, because it was my SATURDAY eats. Which meant ice cream, kombucha, popcorn and more fun stuff. Are you ready?

The day started out with a nice 5k with B and myself. After the run, it started to get hot off and I was craving some fruit and something fresh. The cure? We stopped off at one of my favorite downtown breakfast spots, Restore for some avocado toast, a smoothie AND an acai bowl. Don’t worry, we split the three between us:

After breakfast, we headed to the West Side Market to pick up groceries. I was still feeling in the mood for fruit so I grabbed this bad boy and some grapes to snack on during the day:

After the Market, we headed out to Hingetown, where B got coffee and I got – you guessed it – kombucha at Cleveland Tea Revival. I can’t get enough of this stuff!20150718_105202

We had a relatively lazy afternoon after that and ended up going out to dinner, to the movies, and then out for dessert.

We had a gift card to Town Hall and enjoyed an appetizer of lettuce wraps (sorry, forgot to take a photo before … you can see some remnants below).

And I got this massive kale, beet, goat cheese, almond and veggie burger salad for dinner. I ate leftovers for 2 days 🙂

We then headed to the movies and saw Trainwreck. B got popcorn, and I had a few handfuls. NO – I did not take any pictures during the movie 🙂 But AFTER the movie, we went out for ice cream. Holy cow, was this  sundae delicious. Salted caramel ice cream with toffee bits and a bit of B’s whipped cream and cherry. I had a long run planned for Sunday morning, so of course I had to count this as part of my cargo-loading 🙂

That concluded my Saturday. Wow, looking at this, I want to go back! So much good eats in one day!

WIAW #24: TGIF!

Today’s What I Ate Wednesday post is a FRIDAY. Alas, it wasn’t an overly exciting Friday-  just your standard workday Friday.

 

Breakfast was egg whites and veggies. I know – shocker. I’m a creature of habit 🙂

Lunch was mishmash – leftover spaghetti squash with homemade tomato sauce and basil (yummmm!) as well as a pre packed salad with a store-bought veggie burger.

Snacks that day included some super salty almonds (Yum!) and more spaghetti squash. This time with honey and cinnamon. I forgot to take a picture (thus a photo of the empty container).

B and I had a long run planned for Saturday, so we opted for a low key Friday night. I love vegan food before long runs, so we tried out a new restaurant. The food was pretty good – I had a sweet potato veggie burger wrapped in collard greens.

And of course, I had to have dessert. I made myself a mini bowl with a bunch of random treats – white chocolate chips, banana bread, chex and chocolate.

March Comes Out Like a Lion?

You know the saying “March comes in like a lion and out like a lamb?” Well, not the case with this month … this March definitely is going out like a lion. This weekend was cold, cold, cold … but we still made the most of it!

Friday night started out pretty low key – B and I had plans to run 8 miles on Saturday morning, so we decided to get dinner at my favorite vegan place, the Flaming Ice Cube. They were out of kalebouli, so instead of my typical kalebouli wrap I got a pesto vegan burger.

After dinner, B and I caught up on last season of The Walking Dead. We are finally finished with season 4 … now onto the current season!

Saturday morning B and I hit up the park for 8 miles. We haven’t run outside downtown in FOREVER so it was great to get out in nature.

After our runs, we hit up the West Side Market for some of our weekly groceries. Even though we go to Heinen’s a lot now that they have a downtown location, we still hit up WSM when we can because it’s fun and cheap.

And for lunch? It was a perfect day for soup and bread. The cauliflower chickpea curry soup at The Souper Market was delicious!

After we got back to the apartment, I knew it was time for some baking … I decided to make some lemon bread. It came out delicious!

Saturday night, B and I decided to head to Winking Lizard for a few drinks while watching hockey (and take in the NCAA crowds) and get some wine at Heinen’s before dinner.

Sunday afternoon I ended up having to work so no fun photos of that. But Sunday night B and I grabbed dinner at Heinen’s before heading out to see another movie at the Cleveland Film Festival.

We saw All Stars, which was a really fun movie. I don’t have any hand-eye coordination but still played softball somewhat when I was much younger (my dad was even a coach for a little while!) so it was fun to see a movie like this! Definitely brought back some memories.

  • Favorite pizza toppings? I love lots of veggies and meat on my pizza. A pizza with just cheese is boring and uninviting to me. Since I gave up meat for Lent, pizza with mushrooms (And tons of cheese!) hit the spot.

WIAW: Busy Monday

Today’s What I Ate Wednesday features some of my eats from the start of this week. And it includes some meals that are NOT homemade for once! Woohooo! Because that’s how my Monday was.  

I woke up hungry! I don’t typically eat anything if I’m running early and it’s not a long run, but I grabbed a handful of trail mix from this pack that I had gotten at the St. Malachi race. I had eaten part of the package on Sunday at the movies and was happy to have a few nuts and pieces of dried fruit to quell my hunger before a 4 mile outdoor run. 20150323_070704 Per usual, my breakfast was eaten at my desk and included egg whites and veggies, made by B. We had run out of frozen veggies, so I had made some Brussels sprouts Sunday evening and B cooked up some spinach. 20150323_082222 I had a busy morning and was pretty hungry when lunch rolled around. I had some leftover soup that I had frozen – some black bean, butternut squash soup.

And since I was hungry for lunch, I was super hungry for afternoon snacks. I had a bunch of smoked almonds (from the office), a pear, a sweet potato, some tea, and lots of carrots. I had already eaten half the almonds and carrots by the time I took this pic.

After happy hour B and I had tickets to the Cleveland Film Festival. For my fourth film (yup, I love CIFF!), we saw the Hollywood Shorts. Oh my goodness – they were so good! I don’t think I’ve ever seen a shorts program where I enjoyed all the movies, but they each kept getting better and better! My favorites were  Today’s the Day and Dragula. The movie didn’t get out until after 9 and of course I was hungry again. I had finished the breakfast trail mix already and wanted something quick and ready (not something I’d have to make at 9:30 p.m. at night). The solution? Noodlecat! I picked up my favorite salad, the Super Salad. Its description:

We didn’t finish eating until after 10 and I wanted something else, so I satisfied myself with some more citrus. I’m not typically a huge orange fan, but maybe the orange and grapefruit on the salad got my in the mood? I would’ve gone for a peanut butter brownie bar that I had made last week, but B and his friend had eaten them all over the weekend. 😦

AND here is an update of my Fitbit for the day! My morning run, plus walking to and from my happy hour and the movies, put me at a weekday high – I never get this high unless I have a weekend (and lots of walking around) or a long run. Screenshot_2015-03-23-22-50-48 (1)

A super belated weekend update

I know, I know. It’s THURSDAY for goodness sake and I’m just sharing you my weekend update now. But I was sick Sunday/Monday and of course had to get you my Training Tuesday post … anyway, here it is! Last weekend – which is super exciting to think about because this weekend is already almost here woohoo!

Friday evening B and I went out for wine, comedy and more drinks. I know – you’re probably super surprised because the past few Fridays B and I have been staying in. I’ve been in winter hibernation mode and more than happy to spend Friday night in with some wine and takeout and Netflix. But not this weekend – first, B and I started the night with a stop at Heinen’s for a few glasses of wine. Yup, wine at the grocery store = classy. Their new downtown location is just gorgeous though and it’s a great place to grab a drink and snack!

Then it was time for the show. We saw Joey Diaz at Hilarities. He was really really good – a little raw (that’s his style) but super funny! I love going to comedy shows with B and it was a nice way to kick off the weekend.

After the show, we hit up Parnells for a nightcap. While there, we met up with B’s aunt and uncle who were in town to see Dirty Dancing and spending the night at a hotel. We grabbed drinks with them before heading back to our apartment.

Saturday morning started early – for me at least. I like sleeping in on the weekends. We had plans to meet up with B’s sister Mary and her friend for a 6 mile run at 8 a.m. It was in the 20s for the run, which was so warm! The sidewalks weren’t that clear, however, so it was a little icy. I can’t wait until clear roads and great running weather!

After the run, B and I hit up the West Side Market for some groceries for the week. We grabbed some Cleveland Bagel Co. bagels and tea at Cleveland Tea Revival and  then it was time to head to Columbus!

B’s cousin’s birthday was Sunday and we had planned to take a day trip down to see him, go to the movies, and get dinner for his celebration. We ended up getting to do all of those, which was fun – we hadn’t seen them since Christmas!

Sunday I woke up to sunny skies and “warm” weather – I was so excited to spend the day outside, going out to brunch, on a walk in the park, you name it. Sadly, my body had other plans in mind – I woke up with a slight fever, headache and achy body; so instead of enjoying the warm weather, I spent the day on the couch. I rarely get a day with fewer than 12,000 steps (I haven’t since I got the Fitbit in January) but got in a measly 700-something. I did end up watching 3 episodes of Walking Dead and several episodes of my new favorite Netflix show, the Unbreakable Kimmy Schmidt. If you haven’t started watching this, you must:

And that was pretty much a look at last weekend. Besides spending all day Sunday inside and on the couch it was a pretty fun time! And now – looking forward to THIS weekend!
