WIAW: Cinco De Mayo

Cinco Cinco Cinco De Mayoooo … woopwoop! That’s right, I’m sharing my Cinco De Mayo eats for  What I Ate Wednesday. Unfortunately, it wasn’t a very Mexican-themed day–but I did try with dinner!

The day started with the return of the smoothie bowl! It had some vanilla protein powder, ice and some frozen blueberries and raspberries. I had not had one of these in AGES and it was so good!

Lunch was a ginormous salad I had made – so good. It had a little bit of chicken, broccoli, cauliflower, feta, avocado, tomato and a Japanese sweet potato (hidden).20160505_123904

And then I headed out to Barrio to celebrate Cinco De Mayo! I didn’t imbibe and only could be there for a little, but thy do have the best chips and salsa.

Before dinner, I admit I had another sweet snack – one of these freshly baked chocolate chip cookies. It was SO good.

Dinner was semi-Cinco De Mayo themed? I made some cilantro lime quinoa with avocado, feta, broccoli and black beans. I paired it with some chicken and cumin/lime roasted potatoes and cauliflower.

Confession – I couldn’t finish my plate. I’ve been getting super full while pregnant and my stomach was too full to finish dinner. After dinner, I made some granola, but somehow found room for a bowl 🙂 You know, for quality control.grnaola

 

I really wanted to do more Cinco De Mayo themed food and even a fun dessert (homemade churros perhaps?) but pregnancy fatigue sat in and I was too tired after dinner and making granola to do much else. Still, a satisfying What I Ate Wednesday.

WIAW #22: No Groceries.

Happy What I Ate Wednesday! Does anyone else feel like it should be Thursday, or even Friday? I’m still recovering from the Fourth of July and a busy work week.

Anyway, these were my eats from Monday. I got back late Sunday from our trip to Milwaukee and didn’t go to the store. I didn’t meal prep. So here  it is – what you see is when I don’t have groceries (until the end of the day).

The morning started with another smoothie bowl. I know – for a person who doesn’t like smoothies, I’m starting to really enjoy smoothie bowls. They can’t replace my typical eggs, but when you don’t have any groceries but do have some frozen fruit, a Vitamix and protein powder at work, this will do. Again, it doesn’t look that pretty but it tasted pretty good. It was some Hemp vanilla protein powder (free sample I had gotten in the mail), some water, some ice, and some frozen strawberries and blueberries. Topped with some flaxseed and chia seeds for texture. AND eaten with a spoon. Evne though some of it was in a glass (see how much it made?!)

Lunchtime I headed over to one of my favorite downtown sandwich and salad places, Stone Oven and got my favorite salad. Janea’s salad. Feta, chicken, sun-dried tomatoes, roasted red pepper, bread, croutons, tabbouleh and couscous salad. Such a good meal. I was in food heaven.

I also had some Werther’s and mustard. Yes, I like mustard packets. By themselves.

For dinner,  I had plans to introduce a friend to some zoodles. She had never had them before, so I headed over to Heinen’s after work to pick up some goodies to cook and we ended up making a dish for Meatless Monday – vegetarian lomein with zoodles instead of pasta. It was pretty good!

She brought over dessert – some paleo zucchini brownies and cookies she had made. They were both really good! I’m a purist when it comes to dessert, and these didn’t taste like traditional cookies and brownies – but they were still really tasty. I may have taken some for leftovers. Zucchini brownies for breakfast anyone? (It may defeat the purpose, but they’re so delicious with peanut butter too :))

WIAW #20: New Breakfasts

Happy Wednesday – are you ready for another What I Ate Wednesday? These were my eats from last Thursday – I tried to switch things up a little bit. Well, for at least one meal – breakfast!

Thursdays are my new cross training days. I’m training for a half marathon in August and I’m trying to stick to the schedule so the day started with 1 mile jog (gotta keep my Runners World streak up!) and an easy elliptical workout.

B typically makes me breakfast, but I was on my own Thursday morning as he was sleeping in. So, I brought in protein powder and fully expected to just have a protein shake at work and maybe some fruit. BUT my coworker Cari let me borrow some almond milk and I used our office Vitamix to make myself a smoothie bowl! It doesn’t look that pretty but it tasted great- it was 2 scoops Biotrust vanilla protein, about 1 cup almond milk, 1 TB PB 2 and some ice.

Not quite the same as my typical egg whites and veggies but still pretty good!

I was pretty full until lunch, when I had a salad. It was combined leftovers from a few nights – half a turkey burger from Tuesday dinner, half an ahi tuna steak from Wednesday dinner and some lettuce, bean sprouts and hummus (hidden). I also had an apple. Delish!

For dinner, B was craving some roasted chicken so I picked up a rotisserie from Heinen’s and paired it with some veggies we had in the fridge – I roasted some cauliflower and sautéed some zucchini with peppers and onions (and basil).  Again, pretty good! I also had part of a sweet potato with cinnamon for “dessert.”
