Happy Wednesday! I can’t decide if this week is flying by .. or if it’s only Wednesday.

Today’s What I Ate Wednesday eats are from last Thursday. It was a GREAT day because it’s the day I brought home my Vitamix! It was also a great day of eats, as I was wined and dined at the Vitamix store in Solon, Ohio. I pretty much had a four-course Vitamix-made dinner!

The day started pretty typical. Egg white oats with flaxseed and cinnamon and brewer’s yeast.

I had a lunch meeting to go to, so I was able to have a pretty good lunch. Fish, salad, pita chips, hummus and veggies. 20170223_120946

That afternoon for a snack I had some nuts and an apple. 20170223_143419 20170223_145919

And then it was time for the glorious Vitamix evening. We started off with some frose. It was delicious – I don’t even remember all that was in it but it was dangerous. Gin, bitters, wine? Oh yea, and almond milk!20170223_183119

They had the most gorgeous assortment of cheese and veggies and dips. 20170223_191545 20170223_191855

And we also were treated to black bean quinoa sliders with an avocado dipping sauce. Not only was the sauce made in the blender, but also the burgers!20170223_183302

Dessert was fruit and a chocolate mousse. 20170223_193710

Said chocolate mousse. And strawberry “not” ice cream – it was strawberries, yogurt and vanilla! (the empty cup is behind the mousse)

And that was about it. It was so good! And since I was able to go home with my very own new Vitamix Ascent Series blender,  I can’t wait to make so many of these things!!

Some questions for you for today’s What I Ate Wednesday:

  • Do you have a Vitamix? What do you make in it? I need ideas!
  • What’s something good that you’ve made recently?

I LOVE my Vitamix and use it everyday for my smoothies. I haven’t tried much else with it though, I love all the eats you had at the party though!

I just made black bean soup in it and it was great!

Those snacks look so good! I don’t have a Vitamix yet but I’d really like to get one. I know I’d get a lot of use out of it but they’re just so pricy!

Hold up… there’s a Vitamix store dinner?! I’m so freaking jealous. I’ve had my Vitamix for 5 years now and it’s a staple. You’re going to LOVE it!

The store has so many cool events including happy hours!! It is amazing. Do you have a favorite Vitamix recipe or thing to make?

I make smoothie bowls most often. I also really love making creamy tomato soup, but using tofu to give it the texture (and protein!).
