Happy What I Ate Wednesday! Here is a typical day … why is it typical? Because I had zoodles for lunch and cookies for a midnight snack. It’s all about a balance right?

The morning I started my day with my usual. I’m so predictable. Egg whites and veggies all the way! If you like something, why mess with it, right? OH and we had a new bag of pistachios at the office so I had a few of those with my eggs.

Lunch was leftovers! I had made some zoodles in an avocado pesto sauce for dinner the night before, so I enjoyed that with plenty of snap peas. AND kombucha! My first time trying this flavor. It was okay, made the kombucha even earthier than usual.

Snacks during the day included:

Carrots and unsalted mixed nuts

Some homemade granola (I get on granola-making binges sometimes and can’t stop. Which is good because I love eating it and sharing it!

I had to work somewhat late so B made dinner! And what a dinner it was. Steak (cooked just the way I like it – medium rare), avocado, asparagus and broccoli. I am back to eating meat and this was the first steak I’d had in at least 3 months.

After dinner, I got down to baking business. Which is what I like to do — except for some reason these cookies took me 2 hours to make. Whoops! It meant a late night – and late night of cookie tasting as well. I finished off my evening with a few of these peanut butter oatmeal cookie bars:

    Girl, you know I eat the same thing every weekday, haha. I like the Gingerade and Green Monster Kombuchas. That dinner looks SO good! Perfect dinner in my book. And those bars… Nom freakin Nom.

      Thanks! I’m still working on the recipe – I used something similar to this Monster Cookie recipe (https://icrashedtheweb.com/2013/04/17/monster-cookies-for-blue-green-day/) but made them into bars which didn’t 100% work. They tasted good but were pretty dense and I should have used a bigger pan – they took more than an hour to cook!

      Haha I went through a package and separated them. I brought them in to share with coworkers on Donate Life Blue and Green Day so that seemed appropriate!

    I’m a big fan of the GTS but as far as flavors go if you like mango it’s a good one to start with because it’s less “earthy”

    Avocado pesto sauce is something I’ve been meaning to try for ages and wonder why I still haven’t. I should also finally purchase the spiralizer I meant to buy my mum for her birthday which was … a while ago. Haha, I’d say your post served as a good reminder.
    Also, your homemade granola looks positively chunky – the best way!

    I have tried three flavors of kombucha: turmeric sunrise, ginger, and lavender melon. I liked lavender melon best. It might have been because the drink was served ice cold. I think I don’t care much for kombucha unless it is served very cold.
