WIAW: Pumpkinfest!

Cheers to Wednesday! And I’m cheersing you this week with pumpkin beer. Because ’tis the season AND I love a good pumpkin beer. And today’s What I Ate Wednesday appropriately features my pumpkinfest eats!
The day started off with a decaf latte and some cinnamon honey egg white oats. I’m really jamming on the egg white oats lately and they’re easy for me to make in my office. So fluffy and delicious!

Lunch was random leftovers. Some leftover soup and some leftover chicken from some lettuce wraps I had made as a crockpot meal earlier in the week. In any case, it was really good.20161013_125318

And for an afternoon snack, I enjoyed some nuts and 2 Boobie Balls (aka energy balls for all you non-breastfeeding folks). 20161012_115035

Then it was time for pumpkinfest! Which basically was a Halloween-type party in my office featuring pumpkin beer and treats. I had some pumpkin candy corn, beer and a cookie.20161012_154141

Dinner was a one pan roasted pesto salmon with some veggies. It hit the spot – I can’t remember the last time I had fish! And it was so easy to make!

WIAW: Typical Office Eats

Welp, as I mentioned, I’m back at work from maternity leave.  Which means – back to my typical office eats. Every day is somewhat different, but for today’s What I Ate Wednesday, I wanted to share a pretty typical day of food and snacks when 99% of the food I ate that was at my office. Here are last Thursday’s eats!

Breakfast was oats – I’ve been on an egg kick lately, but B was traveling for work and didn’t have time to make me eggs and since I’m lazy, I made some egg white oats and topped it with banana and mixed nuts. They were SO good! I love egg whites in my oats heated up – they fill me up longer AND take on a custardy type texture.

Lunch is not that pretty looking but it hit the spot! A ton of roasted veggie s(squash, eggplant, onion, zucchini) and some ground chicken gyro meat that was leftover from dinner. All on top of some spinach. YUM.

Dinner was one of my favorite quick and easy meals – roasted veggie hash topped with a runny egg. I need more easy quick meals in my life!20161006_182547

And of course, dessert. Arctic Zero Vanilla Maple topped with some chocolate chips, chocolate wafers and PEANUT BUTTER. There was more peanut butter on the bottom too.20161006_200221

That was it for my What I Ate Wednesday eats! I headed to bed literally right after my dessert and conked out. I’m so tired now that I’m back at work. Between running, working, and not sleeping (FW is still waking up 1-2 times a night to eat), I’m not sure how my brain is functioning most days.

WIAW: Back From Maternity Leave

Last week I went back to work after taking off 3 months of maternity leave. It was one of the hardest things I’ve ever had to do and I was so surprised that it was. I was an emotional wreck. After spending 3 months with FW, I could barely think about leaving him all day. I may go into those emotions more in a future post, but for now, it’s  What I Ate Wednesday! And here are my eats from my first day back at work, last Thursday.

But first, here’s a pic of FW all dressed up for his first day of daycare. It’s from my Instagram account (@koskim).

Anyway, breakfast was B’s specialty! He made me egg whites, spinach and tomatoes and I packed it up and brought it into work. It was nice to be back eating at my desk and an old staple.

Lunch was a whole bunch of roasted veggies I had prepped a few days earlier and some grilled chicken, all on top of some spinach. Plus some avocado. It was so good and hit the spot. 20160929_132638

Snacks during the day included an apple from our apple picking adventure, a PB&J muffin AND some nuts. You can see some pistachios AND these delicious pumpkin spice almonds that my coworker shard with me. I love pumpkin spice flavored things!!20160929_144747 20160929_152453

Dinner was right from the freezer. I knew I’d be too tired (emotionally and physically) and drained after my first day back to think about dinner so I had taken out some Skinnytaste Late Summer Enchilada Pie from the freezer and paired it with some more spinach and roasted zucchini. This dish is my FAVE and it freezes well! SO happy to have some freezer meals these coming weeks as I get back into the groove of work and figure out how to balance little sleep, running and a newborn. Yikes.

That was it! I almost had some ice cream and leftover french toast for dessert, but I honestly was too tired to move off the couch and open the freezer. I passed out around 8:30 p.m. – a record for me!

WIAW: Pizza Fridays

I love Fridays. For many reasons. Like many people, Fridays signify the end of the work week and the beginning of the weekend.  But also, it’s PIZZA AND BEER DAY in our household! Fridays typically mean B and I grab patio drinks or a drink somewhere and then B makes pizza (or we order it … I prefer when we make it) and I get to eat it. Pretty enjoyable. And that’s exactly what this post is – last Friday’s eats for this What I Ate Wednesday!

Breakfast was some homemade granola. I tried out a new recipe. It wasn’t as sweet as my typical batches but also not as clumpy. I really liked the way it turned out – I may be sharing it soon!20160518_213934

After breakfast, it was still early (and I was still on maternity leave), so B and I took FW out for a little morning walk.

And then it was bath time. For FW. I know it’s not food- but it was still a big part of my day.

Lunchtime came and I was starving. I was supposed to have lunch plans, but they fell through so I was super happy to have some food at home. Egg whites, spinach, sweet potato (with cinnamon and coconut oil) and avocado. 20160923_130841

For snack? An apple from when we went apple picking.

And per usual – Friday beers! We found a patio with seats and I had my first pumpking – my favorite pumpkin beer!

I mixed it with my other favorite pumpkin beer, Warlock. Pumpking and warlock together are SO GOOD!

AND as usual – it was PIZZA night! I had a few slices (maybe more than the slices pictured below) of the pepperoni mushroom pizza we made.

WIAW: Celebrating B’s Birthday

Does anyone else feel like last week went by waaaay too fast? Like, wasn’t I just writing a WIAW post? Anyway, this week’s What I Ate Wednesday features food from celebrating B’s birthday. We had a date night and FW’s aunt watched him so we could go out and celebrate!
Breakfast was some egg white oats and a peach and nectarine.  We were so so lucky to have some great peaches this year and these were fresh from the farmers market.

Lunch was a salad. I had roasted some veggies and added them to some lettuce and other veggies (including avocado!)- it was delish!

Snacks included an apple and almond butter and some additional spoonfuls of peanut butter (not pictured).

Plus tons of hugs and kisses with this guy because this is my last week of maternity leave. I’m going to miss him so much!!

When Mary came over, it was time for us to go out! We went to a new place near us for drinks and decided to stay for dinner. I had some Rosé and B had a delicious bourbon drink.

We started off with some appetizers to share. This warm pita and Indian hummus were amazing.

We also split some meats and octopus  on sticks (not the actual name or what they called them). 20160914_195315

And then for dinner we split the octopus tacos and the poke tuna “sandwich”.20160914_201526

 Everything was delicious! We ended the meal stuffed and didn’t end up getting dessert or after dinner drinks.

And that sums up my day of eats from Wednesday. Now, some questions for you!

Ice Cream for Dinner after the Dentist

Happy Wednesday! We’ve made it halfway through the week, and this Wednesday is especially special because tonight B and I are going out to celebrate his birthday. His big day was yesterday (and of course we celebrated with a great dinner from Mod Meals and a cake I made), but tonight we’re having Aunt Mary babysit so that we can get dinner out, just the two of us. Our second date night since FW was born!

It’s also What I Ate Wednesday! This day’s eats aren’t the healthiest – but that’s what WIAW is about, sharing our eats, for what they are.

Breakfast was pretty good – I’m on an overnight oats kick again, mainly because I don’t have granola anymore, am trying to not eat a gallon of yogurt a day (I think FW doesn’t like that, so I’ll keep my dairy to ice cream) and they’re easy to eat with a baby around. This time I had some cinnamon and almond and peanut butter in my mixture of oats, chia seeds, honey and almond milk.20160908_090043

Midmorning, FW and I went to two farmers markets that are walkable from our apartment. We may have gotten a little overexcited and purchased a little too many peaches, nectarines, veggies and local bread.

So  naturally, I snacked on a peach (it was SOOO GOOD) and nectarine that morning.20160908_114742

I also made some buckeyes that morning for a surprise for B’s birthday. So naturally I had one or two of those.

For lunch, I had leftover grilled chicken (my parents had sent me home from NY with leftovers, yay!), half a baked sweet potato, sliced local tomato (SO much better than non-in-season tomato) and spinach.

AND of course, I had to try a slice of that cinnamon bread I had bought at the market. So good!

B and I had dentist appointments that evening and after the dentist opted to stop by the local Dairy King for a quick treat to beat the heat. I had vanilla soft serve dipped in butterscotch. It was so good – but I was stuffed and not hungry for dinner after our 6 pm ice cream treat!

WIAW: Enchilada Casserole

Cheers to Wednesday! I don’t know about you – but even with being on maternity leave, having Monday off makes the week fly by. How is already Wednesday? I’m not complaining – I’m pumped and ready to share today’s What I Ate Wednesday. This was last Wednesday’s eats!
The day started off with a trip to the West Side Market. I ended up buying a bunch of fruit while I was there, so breakfast was a lot of melon and watermelon, plus the last 2 Boobie Balls (aka energy balls for all you non-breastfeeding folks). 20160831_114126

Lunch was a combo of a salad I had put together from leftovers (corn, beans, part of a turkey burger) plus some toppings from the Heinen’s salad bar, including tabbouleh, quinoa and tortellini!

Afternoon snacks included some bread and sweet potato with a variety of nut butter (I had almond butter and two varieties of peanut butter) and some more fruit salad.

B’s sister was downtown after work and invited us out for beers. I had a nice saison- but I was pretty tempted to get a pumpkin beer!

Dinner was SO good. FW had taken two solid naps during the day, so I was able to do meal prep and prepare Enchilada Pie from Skinny Taste. I had gotten most of the veggies from the West Side Market that morning and all day was looking forward to this enchilada-type casserole.

Speaking of enchilada casseroles, when i mentioned the dinner to B, he reminded me of the bit from one of his favorite comics, Felipe Esparza  (from the Whats Up Fool podcast).  I couldn’t fins the actual bit we saw him perform online but if you watch this you get the idea:

The pie was so goos and easy. And we had leftovera for lunch plus another dinner now in the freezer!

WIAW: Cookies For Lunch (Whoops!)

Happy What I Ate Wednesday ! Hopefully you’re enjoying a great week and you’re enjoying the last few days of summer (I can’t believe the unofficial end is in sight! eep!)

This day includes a less-than-heathy day…a day when I happened to have a few cookies for lunch. Whoops!

It all started out fine – some delicious fruit salad (peaches this year ARE SO GOOD!) and some of these boobie balls (recipe here).

And then lunch – I was baking to bring in treats to B’s office and ended up baking while FW slept and when I usually eat lunch. So this became my lunch. These peanut butter bars were SO good though!20160829_141212 20160829_152815

In the afternoon, FW and I took a walk to Bloom bakery. Not pictured – but while we were there buying a loaf of their amazing house white (it tastes like sour dough!) we enjoyed some free samples. A bite or two of brownie and chocolate chip cookie.

For dinner, I was craving something summery. So I may have gone a little overboard. Some turkey burgers with corn on the cob, some sweet potato and red potato salad, fat free refried beans, spinach and a side salad.

That was it! I opted to only have a bite of one of those cookie bars before giving it to B to try. Enough dessert for one day! And that was my What I Ate Wednesday eats.

WIAW: Double Ice Cream Day

It’s Wednesday already? Thank goodness – only three more full days until the weekend and it’s also What I Ate Wednesday – time for sharing and checking out a random day of eats. I love seeing everyone’s eats and sharing my own. These are my eats from Thursday – and it just happened to be a day with ice cream more than once a day.

Breakfast was a huge fruit salad.

Followed by some more fruit.  I had bought what I thought was a cantaloupe at the store, but when I cut into it – it was green! It wasn’t a honeydew either. No idea what it was – but it was delicious. 20160818_104248 20160818_164244

Lunch was a mishmash while FW slept. A salad and a black bean burger. Plus a sweet potato and some spaghetti squash with cinnamon, honey and a little bit of peanut butter (not pictured).20160818_135450

Snacks that afternoon included some some chex mix – thanks to Cuoghi! Her mom made a ton and she shared some with me.

Dinner? Some chicken, and farmers market/local farm fresh veggies. Tomatoes from B’s coworker’s garden, plus zucchini and potato and onions roasted (all veggies from the farmer’s market).20160818_184229

And then, dessert! B and I took a walk to get ice cream sandwiches. Cathy’s creamery downtown is the best. Cookie dough ice cream, one chocolate chip cookie, one peanut butter cookie and white chocolate chips.

Dessert was definitely a surprise, but SO GOOD. Ice cream #2= amazing.

WIAW: All By Myselffffff

Okay the title is a little bit of a misnomer. But here are some eats for last Thursday, when I ate all of my meals – that’s right – by myself. Okay, not REALLY by myself – this guy joined me .. but I was the only adult at each meal I ate for the first time in a while. So here is what I ended up eating for today’s  What I Ate Wednesday!

For breakfast, B and I got smoothies at Restore. I know- I said I ate alone. But I did – I ate it while BF’ing FW. We also got coffees –  my iced coffee from Phoenix was delicious – but it took me about 3 days to drink it …

I had lunch while FW was napping and made myself some egg whites and cheese with leftovers from dinner – sweet potato, zucchini and pepper hash. It was delicious – and again, eaten alone.20160811_132538

I had plans to meet up with a coworker, his wife and their new baby for an afternoon drink and opted for white wine. Yes, it was social (with other people) – but no food (minus a potato chip or two that was on the table) was really consumed.20160811_170112

B had after work plans – an event and then the Indians game – so I was on my own for dinner. I stopped off at the Heinen’s salad bar and picked up this.  There are some more tortellini, quinoa and other goodies under that lettuce.20160811_181627

I heated up some soup my mom had made and brought when she visited to go with my salad – chicken and pasta.

That was it! A pretty good day of eats by myself. Disclaimer-  some days when I eat alone all I manage to eat are spoonfuls of peanut butter, ice cream and handfuls of cereal because I’m holding FW with the other hand all day.
