B is for B’s Birthday!

This weekend was a fun-filled, pre-planned celebratory weekend for B! Why? Because B had a milestone birthday. I’m not going to say how old … but I’m sure you can figure it out 🙂

Anyway, we started off the celebrations somewhat early – Thursday night, I planned a night to Hilarities to see one of B and my’s favorite podcast stars – Pete Correale. I also invited some of B’s friends AND family to join us in the celebration! We had people over before the show for drinks, sliders and pulled pork (thanks to B’s mom!), and some snacks I prepared like buffalo chicken dip, hummus, chocolate cupcakes, chocolate chip cookies and buckeye brownies (recipe is coming soon!).

After the show, we got a chance to say hi to Pete and even get a picture – he was such a nice guy and none of B’s friends were familiar with him but I’m sure they’re fans now; he put on a great show!

Friday night I let B decide how he wanted to spend the evening and what he wanted for dinner – so of course, we ended up at Parnells for drinks and then Superior Pho! After dinner we walked around and caught some of the outdoor movie playing downtown – a Cleveland classic, Draft Day. And of course we enjoyed some leftover cupcakes for dessert.

Saturday was another awesome day where I basically told B that we could do whatever he wanted. Because he’s the best, the day started with him making me breakfast and cleaning the apartment while I worked out (I know – he cleaned our apartment while I got to work out … he knows the way to make me happy). After that, we picked up our CSA and then headed to the Cleveland Flea! I love the Flea and it was a cool fall-like day – perfect for walking around and grabbing a few drinks.

Then, B chose to hit the driving range. We each hit a bucket of balls – and I didn’t do that bad.

After the driving range, we went out to the lake. It had started to get cloudy – and windy – and it was fun to see the water so rough. Hard to believe last year on this same day we were on the beach in LA!

For dinner, B decided he was craving buffalo chicken wings. Wings and beer – not too bad for a birthday I suppose. And then after dinner, it was time for the next part of our plans – another comedy show! Jim Jefferies, another comedian I was introduced to from a podcast, was in town after canceling his show in June and playing in one of the local theaters. He was awesome – he put on a nearly TWO HOUR performance and it was so much fun to see him in real life after listening to his cast and watching him on TV (he used to have a show, Legit).

Sunday was another great day – it included watching the Browns WIN their home opener (probably because B was wearing his birthday gift – the Brian Hoyer jersey), some meal prep for the week and a 5 miler with B. Not a bad way to end a birthday weekend – hopefully B agreed!

Some questions for you:

  • Do you watch Sunday football? Who do you root for? Sometimes – I didn’t grow up watching football but if it’s on and I can multi-task (a.k.a. I don’t have to ONLY watch it) I’ll root for the Browns.
  • Meal prepping – do you do it? Yes, if I get a chance to, I love working with my Fresh Fork finds and preparing lunches in advance. It makes my week so much better and there’s something so relaxing about preparing food. I find it therapeutic! 
  • Any favorite comics? Do you like podcasts? Which do you listen to? I like to listen while working out, especially if I’m indoors – I go for the Pete & Sebastian show or Stuff You Should Know.
  • What would your birthday meal of choice be?

Oatmeal Heath Bar Cookies

I think Heath Bar should also be called the Forgotten Candy. I LOVE love LOVE Heath Bar. It’s one of my favorite candies. Growing up, Heath Bar Crunch Ben & Jerrys was my favorite ice cream and was almost always in my family’s freezer (yes, I know I’m lucky). But it’s also a candy I forget about when I think of candy. If I’m craving something sweet and want to buy candy, too often I’ll choose something like a peanut butter cup, peanut M&Ms or Reese’s Pieces – and leave Heath Bar forgotten. So, this is an ode to my favorite, forgotten candy bar- Oatmeal Heath Bar Cookies. These are based one of my favorite recipes – Special K cookies – but have a few different ingredients.

Oatmeal Heath Bar Cookies

Here’s what you need:

  • 1 c (2 sticks) butter, softened
  • 1 c granulated sugar
  • 1 c brown sugar
  • 2 eggs
  • 1 tbs vanilla extract
  • 2 c all purpose flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 2 c. uncooked old fashioned oats
  • 2 c Special K cereal
  • 1 c. Heath Bar, chopped into pieces (OR buy a bag of Heath Bar that’s pre-diced/crumbled and ready for baking)
  • 1/2 c. mini chocolate chips

Here’s what you do:

  1. Combine flour, baking soda and baking powder and set aside.
  2. In a large bowl, mix Special K, oats, Heath Bar and chocolate chips. Set aside.
  3. Beat butter and sugars until fluffy.
  4. Add eggs, one at a time, beating after each egg is added.
  5. Stir in flour mixture slowly, mixing well.
  6. Stir in oat mixture and mix with wooden spoon until well blended.
  7. Make tablespoon sized scoops on greased baking sheets.
  8. Bake at 350 for about 12 minutes.

Got a chocolate lover in your life? These aren’t THAT chocolatey so you may want to add more chips. OR chop up a HERSHEY’S bar and add to batter as well! That’s what  did for the one in the pic above.

Another weekend in NY

Living in Ohio, sometimes it seems like my home, NY is just too far away. It’s too far for a weekend trip by car (it’s hard to rationalize 15 hours in the car for a day or two trip), and planes aren’t always the most affordable options. Luckily, for various reasons (some not-so-lucky), I’ve gotten a chance to go home and see my family quite a few times the past few months. And that includes this past weekend! A few people from my agency were being recognized, as well as a client I work on, and I was lucky enough to attend a formal event in New York City for the awards ceremony and celebration.

After the awards ceremony, I was lucky enough to spend some time in the city with my brother, and then some time upstate with my parents. It will be at least a month until I see them next – and probably the last time I visit my brother at his school before he graduates (I can’t believe my brother is graduating college this year!).

It’s always so hard to leave – but after a great weekend with food and family, and one of my favorite cities, who can really complain? Here’s to a great week!

HERSHEY’S KISSES Stuffed Pretzel Chip Cookies

I’ve been on a baking spree lately. Seriously, it seems like all I think about all day is baking. And running. When I’m going to bake or run next. I think I may have a baking addiction? Or a brunning addiction? (Baking+Running)

That’s why when Influenster sent me a J’Adore Vox Box, featuring a HUGE family-sized package of HERSHEY’S KISSES, I knew I had to bake with them. I mean, after I opened the bag and devoured a few for  breakfast before a run a sensible dessert, I realized I should probably bake with at least some of them. So I did what any blogger would do – I made a Pinterest board for inspiration – and then decided just to pretty much make up a recipe. And thankfully, they came out.  They came out beautifully!

HERSHEY’S KISSES Stuffed Pretzel Chip Cookies

Here’s what you need:

  • 1 c (2 sticks) butter, softened
  • 1 c granulated sugar
  • 1 c brown sugar
  • 2 eggs
  • 1 TBS vanilla extract
  • 2 c all purpose flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 2 c. uncooked old fashioned oats
  • 1 c. Special K cereal (optional, but I love the extra crunch)
  • 1 c. crushed pretzels
  • 1 c. chocolate chips or chunks or whatever chocolate you have on hand
  • 1 bag HERSHEY’S KISSES, unwrapped (I used about 30 .. or about less than half of my family sized bag)

Here’s what you do:

  1. Combine flour, baking soda and baking powder and set aside.
  2. In a large bowl, mix Special K, oats, crushed pretzels and chocolate chips. Set aside.
  3. Beat butter, vanilla and sugars until fluffy.
  4. Add eggs, one at a time, beating after each egg is added.
  5. Slowly stir in flour mixture, mixing well.
  6. Stir in oat-cereal-pretzel-chocolate mixture and combine with batter, mixing with a wooden spoon until well blended.
  7. Refrigerate dough for about 30 minutes, until chilled. This helps the batter from spreading.
  8. When dough is ready, make about tablespoon sized balls and flatten them with your hand. Gently press Kisses in middle of flattened dough, and wrap dough around it so all you see is a cookie blob (yes, scientific term) and no chocolate is showing. Place dough-covered Kisses on baking sheets lined with parchment paper.
  9. Bake at 350 for about 10-12 minutes.

Some thoughts on this recipe:

  • I LOVE chocolate covered pretzels, and crunch in my cookies, which is why I added the pretzels. You could likely leave them out.
  • I bet this would be just as good with some other fun flavors of KISSES – I haven’t baked with the caramel ones but I imagine those would be AMAZING.
  • I had a few of the mini KISSES on hand and I decided to make some smaller cookies. Just so I could eat 2-3 at a time without REALLY eating 2-3 cookies, right?

DISCLOSURE: I received this giant family size package of HERSHEY KISSES (and some other cool products in the J’Adore Vox Box) products complimentary from Influenster for testing purposes. If by testing them they wanted me to eat or bake with them, then they succeeded. But I think it was a win-win, don’t you agree?

Questions for you:

  • How much do you bake? Lately it’s been 1-2x a week. I know, I have a problem. At least my running is closer to 5-6 days a week 🙂 It’s when they switch that I’ll get worried.
  • Are you a sweet/salty fan? Yup! Which is why I love pretzel M&Ms, chocolate covered pretzels, peanut M&Ms, etc.
  • What’s your go-to baking recipe? I used to be a cupcake baker – but it seems that I’ve gotten myself into a cookie-baking frenzy.
  • Is it Friday yet? Sadly, no. But Happy Hump Day!

Chocolate Chip Cookie Dough Balls

Today, in addition to watching the Browns game, doing laundry, going for a run and doing some work, I was a baking and cooking machine. I roasted tomatoes, made fresh pesto, baked banana bread and even made some cookie dough balls. That’s right – cookie dough balls. Who needs cake balls when you have these tasty treats? And of course, they’re egg free – so not only delicious but a safe way (and perfect excuse) to indulge in the best part of baking – cookie dough!

Chocolate Chip Cookie Dough Balls

(borrowed from this recipe)

Here’s what you need:

  • 2 1/2 cups all purpose flour
  • 1 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1 cup (2 sticks) butter, softened
  • 3/4 cup sugar
  • 3/4 cup brown sugar
  • 1 teaspoon vanilla
  • 1/3 cup milk (I used 1% but may try almond milk next time)
  • 1 cup mini semi-sweet chocolate chips
  • 14 oz bag of milk chocolate candy coating

Here’s what you do:

  1. Cream butter, brown sugar and white sugar. Add milk and vanilla and mix on high speed with an electric mixer (or your beloved KitchenAid).
  2. Stir in flour, baking soda and salt and mix on low speed (or by hand) until incorporated. Stir in mini chocolate chips.
  3. Cover and chill dough for 1 hour.
  4. When dough is firm enough to handle, form dough into 1″ round balls and arrange on a baking sheet lined with parchment paper.
  5. Place dough ball-filled sheet in freezer and let chill for  at least 30 minutes (I went for a run and let mine chill for about an hour).
  6. After cookie dough balls have hardened in the freezer, it’s time to dip them in the melted chocolate! Melt chocolate candy coating in the microwave or according to package directions. Using a toothpick, dip cookie balls into melted milk chocolate and coat completely.
  7. Return chocolate-covered balls to parchment paper-lined baking sheet. Chill until set.
  8. Enjoy! They’re pretty awesome.

The Perfect, Best Chocolate Chip Cookie Recipe Ever

Did you know that yesterday was National Chocolate Chip Day? I didn’t either, until my coworker Cari told me. I must have been psychic, though – I decided to bake chocolate chip cookies and bring them into work.

I’ve been on a quest to make the perfect chocolate chip cookie for quite a while. They tend to either come out flat, or too doughy, or too floury tasting. Well, the wait is over – I’ve found the PERFECT recipe. I am never using a different recipe again. These came out not only tasting great, but also looking perfect (if I do say so myself). And of course, I’m sharing the goodness with you!

How to Make the Perfect Chocolate Chip Cookie:

Here’s what you need:

  • 1 cup (2 sticks) butter, room temperature and slightly soft
  • 1 cup white sugar
  • 1 cup packed brown sugar
  • 2 eggs
  • 1 tbs vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups semisweet chocolate chips (I used chocolate chunks)

Here’s what you do:

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Cream together the butter and sugars. Beat in the eggs one at a time. Add in the vanilla.
  3. Mix together baking soda, salt and flour. Add to sugar mixture and DON’T over mix.
  4. Stir in chocolate chip with a spatula. Drop by large spoonfuls onto ungreased pans.
  5. Bake for about 12 minutes in a 350 degree preheated oven, or until edges are slightly browned. Watch closely to make sure they don’t burn.
  6. Cool on cooling rack. Enjoy!
