Red Velvet Oreo Chex Mix {My first attempt at Puppy Chow}

A confession – while I love to bake, I’ve never ever made the infamous Puppy Chow. You know, that Chex Mix that is coated in chocolate, peanut butter and some powdered sugar? I’ve been on a mission to make it and the perfect occasion finally happened – baking with Nicole!

I’ve been hearing a lot about the Red Velvet Oreo cookies and when I finally found them at Target (don’t worry, I went into Target to buy a “few things” and left with a cart full – EVERY TIME), I couldn’t wait to buy them. They came in a smaller-than-typical Oreo box, meaning I used the whole box in the recipe and wasn’t left with leftovers .. okay, besides the 2-3 that I had to try first.

I am not a big Oreo fan – sorry, I just am not. But I do love cream cheese frosting and when I heard the Red Velvet OREOS weren’t as chocolatey and had a cream cheese type frosting, I knew I had to buy a box. And of course bake with them. Want an excuse to try the Red Velvet OREOs? Here you go!

Red Velvet OREO Puppy Chow 

(I added in Valentine’s M&Ms and sent a bag of this to my brother for Valentine’s Day feel free to make it any time of year you can find these OREOs though! – modified from Sally’s Baking Addiction)

Here’s what you need:
  • 20 Red Velvet OREOs, finely crushed into crumbs (divided into two halves)
  • 1 c. powdered sugar (divided into half)
  • 10 cups Rice Chex cereal (divided into two halves – 5 c. + 5 c.)
  • 1 1/4 c. white chocolate melting wafers
  • 1 1/4 c. milk chocolate melting wafers
  • Extra OREOs, roughly chopped (I used probably 4-5)
  • 1/2 c. M&Ms – I used the Valentine’s ones

Here’s what you do:

  1. Measure out powdered sugar and crushed Oreos and mix together. Divide mixture in half – you’ll use half for the white Rice Chex and half for the chocolate Rice Chex.
  2. Measure out half the Rice Chex – about 5 cups. Pour into a large bowl or tupperware with a lid.
  3. Melt white chocolate on low, in a microwave. Stir throughout to make sure you don’t burn chocolate. Pour melted white chocolate over Rice Chex and store until cereal is covered.
  4. Pour half powdered sugar/OREO mixture over white chocolate Chex. Put lid on tupperware and shake until cereal is coated with sugar and OREO mixture.
  5. Repeat the above steps with the chocolate Chex. Melt chocolate on low, pour over remaining 5 c. Rice Chex and coat, pour remaining powdered sugar/OREO mixture over chocolate Chex and shake to coat.
  6. Combine cooled white chocolate and chocolate Chex mix. Add in extra chopped OREOs and M&M. Share with a loved one or friend!

White Chocolate Oreo Peppermint Bark

Yikes. There is suddenly less than one week until Christmas? I know what you’re thinking – that’s plenty of time to get my holiday baking done, right? Well, okay … it probably is. But if you’re looking for a sweet treat to make that won’t take too much time so that you still have time for some holiday shopping (or napping) then this one’s for you! This bark is sweet, delicious and takes no time to make (and no oven to preheat). Pack it up in a fun container and you have the perfect hostess gift (it pairs well with a bottle of wine too …. just saying) for a holiday gathering this year.

White Chocolate Oreo Peppermint Bark

Here’s what you need:

  • 1 1/2 cups chocolate chips
  • 1 1/2 cups white chocolate chips
  • 1/2 c. chopped / crushed andy canes (about 2-3 regular ones or 8-10 mini candy canes)
  • 12 holiday (red creme) Oreos, chopped (about 1 cup)
  • Red/green/white sprinkles (optional)

Here is what you do:

  1. Line a cookie sheet with parchment paper.
  2. Melt milk chocolate chips in a microwave-safe bowl. Mine took about 1 minute 30 seconds to melt and I heated them up at 30 second intervals, stirring after each Pour onto parchment paper lined cookie sheet and spread flat with a spatula.Let cool for at last 10 minutes or until hardened.
  3. Add white chocolate chips to a microwave safe bowl and melt like you did with the chocolate chips, stirring about every 30 seconds. Pour over chocolate layer and spread to the edges of the milk chocolate. Sprinkle with chopped candy canes, chopped Oreos and sprinkles.
  4. Chill until set, then break into pieces enjoy!

Peanut Butter Chocolate Chip Oreo Bars

Last weekend, B and I went camping with a few friends. Each person was in charge of bringing a specific food item, and in addition to bringing lunch for Saturday, we were slated to also share in bringing dessert. In fact, next to desserts, the list read, “Snacks & Desserts – Everybody bring some, but I have high expectations for Melissa’s desserts.”  Yipes! So the pressure was on. So not only did I bring the AMAZING cookie dough balls  (which were a hit) – but also decided to bring some Peanut Butter Chocolate Chip Oreo cookie bars! Who doesn’t like peanut butter AND Oreos?

Peanut Butter Chocolate Chip Oreo Bars

(Inspired by Picky Palate)

Here’s what you need:

  • 1 stick butter
  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1/2 cup creamy peanut butter
  • 1 large egg (per usual, I used 1/4 c. Egg Beaters)
  • 1/2 teaspoon vanilla extract
  • 1 cup all purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 c mini chocolate chips
  • 1/2 c peanut butter chips
  • 2 cups mini Oreos

Here’s what you do:

  1. Preheat oven to 350 degrees. Spray an 8×8 inch baking dish with nonstick cooking spray.
  2. Cream together butter, sugar and brown sugar and peanut butter. Mix well.
  3. Add egg and vanilla; continue to mix.
  4. Add flour, baking soda and salt to wet ingredients, and combine until a sticky yet firm dough forms.
  5. Add chips and mini Oreo cookies and stir lightly with a spatula so the Oreos don’t crumble.
  6. Transfer dough to prepared baking dish. Dough will be sticky – I had to use my hands to spread it out on the baking dish.
  7. Bake for 30-35 minutes or until golden brown and cooked through.
  8. Cool before cutting. Serve with milk – or if you’re like me, bring on your next camping trip because they definitely traveled well!
