WIAW: Pancakes for Brinner!

YAY for Wednesday! We’re halfway to Friday again. That means it’s a good day to share my eats and see what you are all up to and eating as well. Yup, it’s another What I Ate Wednesday!

Wednesday started with a coffee meeting. I had my first Starbucks holiday cup – I can’t believe it’s already that time of year! A decaf coconut milk latte was just what I needed to start my day.

Breakfast was made for me by B – some egg whites, spinach and vegetables. It’s so good to be eating eggs and veggies again!

Lunch was leftovers. Leftover salmon, roasted cauliflower, mashed cauliflower and roasted zucchini.20161110_132114

Snacks during the day included some energy bites and mixed nuts.

While I prepped dinner, I also enjoyed some sliced pear.20161110_183455

Dinner was pancakes! I made some buttermilk pancakes and topped them with an apple butter and cinnamon apple compote. Yup, that’s FW in the background. He was just chilling while we ate dinner which was a nice change!img_20161110_191401

And that sums up my day of eats. No need for dessert when you have yummy pancakes for dinner!

    YAY for breakfast for dinner! Haha our friends did a big breakfast for dinner potluck style meal last week and we had so many cinnamon rolls, pancakes, breakfast tacos, and mimosas! It was so much fun!

    Oh heck yes do I like pears – I’ve been eating them almost daily lately. Nice and crunchy too – none of the soft stuff.
    I also love brinner. I think I’d prefer waffles – for those butter laden crevices – but pancakes happen much more frequently here because apparently I can’t use my waffle maker.
