Day In the Life  (WIAW Working Mom Edition)

For today’s What I Ate Wednesday,  I wanted to share a little “day in the life” action. And since the day technically starts at midnight,  here we go. For today’s WIAW, here was my last Thursday:

1 a.m.: FW is up.  We’ve been trying to night wean him, but since he is sick and didn’t eat much at daycare, I only let him cry a little before I go into his room to feed him. I am back to bed and asleep by 2 a.m.

4:45 a.m.: FW is up again.  I feed him and while he’s eating,  my alarm goes off. I typically wake up around 5 to work out, so after he’s done eating at 5:30ish, I head to the gym to workout. Since I’ve been up a few times, my stomach is a little off, so I grab a bite of a cookie as a pre-workout snack.

5:40-6:35 a.m.: This is my me time before the day begins.  I run 4.2 miles and then cool down for .8 and get to 5 total, which I’m happy about. I finish with a short plank.

6:45 a.m.- 7:05 a.m.: FW luckily hasn’t woken up while I’m working out so I have time to shower and get ready.

7:05 a.m. – 7:40 a.m.: FW and B are up! I usually make B a smoothie  (and save leftovers for FW) but B already has breakfast this morning so I instead use the time to send a few emails, get FW changed, dressed and fed, get his food amd milk ready for daycare, get my and B’s lunches ready  (I had prepped them the night before) and spend some time cuddling with FW before work.

8 a.m.-4 p.m.: work! I eat most of my meals and snacks at my desk, which include:

Breakfast! Plain yogurt, granola bites (cashew clusters), banana and a cutie.

A snack of some dried mangoes and nuts. 

Lunch was some roasted sweet potato slices and leftover cabbage and ground chicken stir fry.

And some leftover decaf coconut milk latte because I was getting sleepy in the afternoon.

My day is usually over a little later but I have a meeting out of the office in the afternoon and need to head out early to get there on time. I had a networking event at a place that had drinks and chips. These chips and salsa were great!

5:30-6 p.m.: My meeting was over around 5:30 and then I headed to daycare to pick up FW. I hit some traffic on my way home and didn’t end up getting back to our apartment until after 6.

6:30 p.m.: Since it was so nice out, B and I decided to go out for a walk. It was sunny and somewhat warm and not a bad night for a walk with B and FW.

7:15 p.m.-7:45 p.m.: Got home and put FW to bed. While I was putting FW to bed, B was making dinner! We were having brinner.

7:45 p.m.: Dinnertime. While we ate, we watched the end of Joy, which we had started a few nights earlier. I catch up on emails and finish up some work when the movie is over.

9:45 p.m.: Get to bed.

And that was it- that was my Thursday!

WIAW: Black Truffle Pizza

Happy Wednesday! I missed last week’s What I ate Wednesday because frankly, I was busy and tired. It was one heck of a week and I’m glad it’s over but I’m already ready for Friday! Alas, it’s not Friday- so here are my WIAW eats from last Thursday.

The day started with a small smoothie and some BF egg white oats. The smoothie had BROCCOLI in it – yes, broccoli!  You can see what’s going in it, below:

And here is the complete meal. 

A mid-morning snack of some mixed nuts.

Lunch was DELICIOUS. We went out and I feasted on this truffle, mushroom, arugula pizza and a kale salad with oranges and goat cheese.

I was pretty full but had a snack before dinner of some homemade almond butter I made in the Vitamix.

Which held me over until dinner – egg whites! Egg whites, spinach, tomato and toast. 

And dessert – ice cream 🙂

WIAW: A Blurry Brinner

Greetings from Atlanta! I’m on a little trip right now, but still wanted to share my WIAW eats (especially since I missed last week … last week was a doozy but I survived!). This week’s eats are from last Thursday.

The day started with some egg white oats and mixed nuts and fruit. I have been loving my egg white oatmeal and finding it a really good breakfast for bf-ing – I add in Brewers Yeast and flaxseed to give it some extra oomph.

I had some more nuts for a snack (unpictured) while I was waiting for my lunch.

For lunch, I had a bunch of leftovers but made it into a salad. It was SO good- it included some pork loin and frozen veggies, sweet potato and spinach. A very fulfilling lunch.

And some dried fruit. Probably more than I wanted to have but I had some dates and cherries. I was bummed to realize as soon as I put some in my mouth that the cherries were sweetened! Ugh. They’re good still (obviously) but I’ll have to get back to the market to get my unsweetened dried cherries.

And for dinner? B made us brinner! Yes, it’s a blurry pic but it’s egg whites, avocado, spinach, Cleveland coleslaw (gnar gnar!) and tomato.

And some Halo Top because that’s how I’ve been ending my days lately. YUM. Black cherry is a pretty good flavor!

WIAW: brinner and bacon! (and the worst dinner pic ever)

Happy happy Wednesday! I know I’m usually cheering for the middle of the work week, but today I’m off!! That’s right- I’m off for the holidays and will soon be with my family in NY and I can’t wait! Our days will be filled with holiday goodies, snacks and of course, wintry delicious meals. In the meantime. Here is today’s What I Ate Wednesday – yesterday’s meals. Featuring breakfast for dinner and BACON!

Admittedly, the day wasn’t the healthiest. Or at least it didn’t start off that way- because I started the day with a gingerbread cookie! I just made these and they are so so so good!! Here is the recipe.

For dinner I had a GREAT brinner and beer. And the photo was awful!! I’m so sorry – but instead, imagine a holiday beer – Shiner Holiday Cheer – and eggs, egg whites, spinach, nitrate-free bacon and toast.

And cookies!! B brought home some cookies for work and I tried a few. My favorite were the coconut macaron and that green tree sugar cookie. 20161220_192101

WIAW: Post-World Series Eats

YAWN. I am still tired from last week – Cleveland was crazy, people. We had the World Series here which meant a few late nights and not as much sleep as normal (which is limited anyway now that I have a four month old …). Sadly, we lost the final game – BUT I was there! That’s right, I WENT to Game 7 of the World Series. It was an amazing experience. And today, I’m sharing with you  – the day after. Post-World Series eats for this week’s What I Ate Wednesday.

Okay, now onto the actual food. Breakfast was some egg white oatmeal with dried fruit. I’m getting WAAAYY too into this meal. I added flaxseed and brewers yeast for some extra BF goodness.20161102_082911

And dinner was breakfast!! I love brinner sometimes – B made me egg whites, tomato, spinach and avocado. And delicious Amish bread. I love breakfast for dinner!

What I Ate Wednesday: A Real Wednesday

Guess what – for this week’s What I Ate Wednesday, I’m actually going to share with you a Wednesday of eats. I tend to share Monday or Tuesday (because those are the days I remember to take photos of everything), but this week I’m showing you an actual Wednesday!

For those of you that have followed my WIAW posts before, you know that breakfast for me are typically the same. My hubby B makes me egg whites with an assortment of vegetables and/or beans. This week was no different – I put some cholula on my veggies and wolfed this down around 8 a.m. at my desk. No coffee today – I don’t drink it daily and instead focused on hydrating with my crystal light. Yes, I have a slight addiction.

Work was busy, so lunchtime came and went. Whoops! Thankfully, I was able to heat up my lunch I had prepared the night before – an assortment of roasted cauliflower, sweet potato and onion with smoked paprika and hot sauce (I like spicy food) and tofu. I give up meat for Lent and sometimes I take the easy way out to get in some protein.

For snacks, I had a whole cut up yellow pepper, some peanuts, carrots and of course, tea with honey. I love decaf herbal tea and this lemon ginger tea is so yummy.

B went for a run outside after work, and since I had already worked out, I made dinner while he ran. I was craving some brinner and was happy to see we had the ingredients on hand. Thankfully, I was able to throw something delicious together quickly – we had everything for my sweet potato zucchini hash, and I added a runny egg and avocado. I love this meal so much!

And for dessert?  Some homemade browned butter chocolate chunk cookies I had made and of course more tea and honey.

Some questions for you:

How do you like your eggs? I like the whites the most, but do love the yolk when it’s runny. Yummy!

Meatless Monday: Sweet Potato Zucchini Hash

I can’t believe it’s been so long since I posted a recent Meatless Monday blog post. I’ve been eating plenty of meatfree meals (I give up meat for Lent every year) but I guess I haven’t been blogging about them! Anyway, finally, I’m sharing a recipe with you so that you can eat meatless on Monday (or any day!). I LOVE making this recipe and have made it or a variation of it probably too many times in the past month to count – but it’s so simple and so delicious and healthy that you should try it too! Leftovers are great as well – I typically have four 2-cup size servings with this recipe and then have enough leftover for 2 lunches.

Sweet Potato Zucchini Hash

Serves 4

Here’s what you need:

  • 2 TB olive oil, divided
  • 1 onion, diced
  • 2 zucchini, diced
  • 2 bell peppers, finely chopped
  • 1 sweet potato, diced
  • 2 tsp. cumin, divided
  • 2 tsp. ground paprika, divided
  • 2 tsp. garlic powder, divided
  • 1 tsp. cayenne pepper, divided (or more if you like it spicy! Note – if you have fresh hot pepper – like chili peppers or jalapeño, feel free to substitute with this)
  • salt and pepper to taste
  • Optional toppings: avocado, cilantro, hot sauce, tofu, sunny side up egg (not vegan)

Here’s what you do:

  1. Preheat oven to 400 and finely dice all your veggies. If you’re like me, this may take a little while.
  2. Place diced sweet potato on a prepared baking sheet (I spray mine with Pam or olive oil spray). Sprinkle generously with 1 tsp cumin, 1 tsp paprika, 1 tsp garlic powder and 1/2 tsp cayenne pepper. Cook in preheated oven for about 15 minutes. Check often so not to burn and toss potatoes halfway through.
  3. While potato is cooking, heat half of olive oil in a large pan. Sautee onion for a few minutes or until translucent. Add in remaining chopped up veggies – peppers and zucchini. Add in remaining cumin, garlic powder, paprika and cayenne pepper and cook for about 7-10 minutes  or until veggies are browned and softened.
  4. When potatoes are done, add to pan with rest of veggies. Toss to incorporate. Finish until cooked but not mushy!
  5. Enjoy! I like mine topped with cilantro and tofu. Other fun toppings include avocado, hot sauce and/or a sunny side up egg. I’ve also served it over spinach for an extra nutritional boost. The one pictured (above and below) has tofu crumbles in it.
