Microwave Peanut Butter Fudge

I know it is still summer, but I wanted to share a recipe that is a go-to for my holiday baking. We just celebrated GM’s birthday and this is one of his favorites – and good news, it is SO EASY to make! The fudge is reminiscent of the inside of a buckeye, you make it in the microwave, and it only requires 4 ingredients!

Here is the recipe we use. I make a giant batch of this because I share it with others during the holidays. If you want to make a smaller batch, you can halve the recipe and put it in an 8×8 pan – I’ve had success doing both.

Easy Microwave Peanut Butter Fudge

Here’s what you need:

  • 2 cups creamy peanut butter (do not, I repeat, do NOT use homemade or organic/natural peanut butter that requires you to spread it. This is best with Jif!)
  • 16 oz unsalted butter (4 regular size sticks)
  • 2 pounds powdered sugar (about 7 cups – I like buying a 2 lb bag and just using it all)
  • 2 tsp vanilla

Here’s what you do:

  1. Line a 9×13″ pan with foil or parchment paper so it hangs over the side. Spray liberally with nonstick spary – you don’t want this to stick!
  2. In microwave-safe bowl, combine peanut butter and butter. Microwave for 2-3 minutes, stopping ot stir every 30 seconds-1 minute or until mixture is completely smooth.
  3. Add in vanilla and add in powdered sugar and stir with a spatula until all the lumps are gone. You will have a thick batter.
  4. Spread the batter onto the pan evenly. If topping with anything, add now – I like to top with seasonal sprinkles.
  5. Refrigerate for 2 hours or until just set. When ready, remove fudge from pan and cut into 1-inch squares.
