I stumbled upon a food holiday calendar last week and discovered that March 1 was National Peanut Butter Lovers Day. Oh my goodness – how perfect is that holiday? So naturally, I had to make something to celebrate. I had no idea what to make – there are so many choices! – but decided to make some cheesecake bars featuring peanut butter cookie and peanut butter cup.

I had seen a few recipes that looked good but each one had something wrong with it (in my opinion) – one called for peanut butter chips, which I didn’t have … one only fit in an 8×8 pan, which was too small … and most of them featured regular chocolate chip cookie, NOT peanut butter cookie. So this is somewhat of a made up recipe and you can be I’ll be making it again to perfect it – all for science, of course.

PS – Sorry this is being shared AFTER National Peanut Butter Lovers Day. Let’s just say I fell into a deep sugar/peanut butter/cheesecake bar coma after making these and didn’t get around to writing down the recipe until now. You can still make these – I guarantee they’ll be appreciated any day 🙂

Here’s what you need:

For the Peanut Butter Cookie Dough

  • 1/2 cup butter, room temperature
  • 1/2 cup shortening
  • 1 cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1/3 cup peanut butter
  • 1/2 teaspoon baking soda
  • 2 1/2 cups flour
  • 3/4 cup Reese’s peanut butter cups, chopped
  • 1 cup mini chocolate chips

For the Cheesecake

  • 1- 8 ounce package cream cheese (8 oz.) at room temperature
  • 1/2 cup sugar
  • 1 egg
  • 1/4 cup peanut butter

For the Glaze

  • 4 teaspoons water
  • 2/3 cup powdered sugar
  • 1 tablespoon creamy peanut butter

Here’s what you do:

  1. First, make the peanut butter cookie dough. Cream together butter, shortening and sugar in a large bowl until combined. Then add in eggs and vanilla. Continue to cream until batter seems light. Add in peanut butter and mix thoroughly.
  2. In a small bowl, combine flour and baking soda. Slowly add to the peanut butter mixture and combine until well incorporated.
  3. Stir in peanut butter cup bites and chocolate chips with a spatula. Press half of the dough into the bottom of a prepared 9×13 pan. To prevent the mixture from sticking I spread foil through the bottom of the pan and partially up the edges and then sprayed with a nonstick cooking spray. Resist the urge to eat there set of the dough 🙂
  4. Then, prepare the peanut butter cream cheese topping. Beat the cream cheese and sugar until creamy. Add the egg and peanut butter and continue to beat until smooth. Pour on top of the cookie dough and use a spatula sprayed with cooking spray to spread evenly on top of cookie dough.
  5. Finish the batter: Drop and press small pieces of the remaining peanut butter cookie dough on top of the cream cheese topping. Cover as much of the cream cheese layer as you can.
  6. Bake at 350 degrees for 25-27 minutes or until cookie topping starts to appear golden brown.
  7. Prepare the glaze: In a small bowl, combine the water, powdered sugar and peanut butter. Mix well. Drizzle over bars while still warm. Cool before cutting. Enjoy!

Brown Butter Butterscotch Oatmeal Coconut Bars

You guys. I just discovered brown butter. I don’t know HOW it took me so long to try it out – but my life is changed. I will never bake again without browning my butter!

Okay so that’s false – but in all seriousness, browning the butter for at least this recipe was amazing. It smelled SO good and I think made these bars so much better than they could have been. You MUST try it – I promise, if you get a good browned butter, you won’t be sorry.

Anyway, I had a hankering for baking with butterscotch and while I love these butterscotch oatmeal cookies, I was seeking something somewhat different. After reviewing a few recipes (and my pantry), I came up with these. They’re chewy, really sweet (warning- not for the non-sweet tooth!), and I think they’re delicious. Be careful – they’re also addicting!

Brown Butter Butterscotch Oatmeal Coconut Bars

(adapted from Cook’s Country … because I don’t have cable and am addicted to this show)

Here’s what you need:

For the bars:

  • 1 1/4 cups all-purpose flour
  • 2 cups oatmeal (I used 1 cup quick oats and 1 cup old fashioned – the texture is more chewy with the quick oats and more fibrous / gritty / textured with the old fashioned so i like to mix)
  • 1/2 sweetened coconut
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cup butterscotch chips divided in half
  • 1 cup (2 sticks) butter
  • 1 cup packed  brown sugar
  • 1 large egg
  • 1 TBS vanilla extract

Butterscotch drizzle:

  •  1/4 cup butterscotch chips
  • 2 tablespoons  brown sugar
  • 1 tablespoon water

Here’s what you do:

  1. Preheat your oven to 350. Prepare a 9×13 baking pan by spraying with a nonstick cooking spray or butter.
  2. In a medium bowl, combine  flour, oats, coconut, baking soda, and salt. Set aside.
  3. Brown your butter! In a small pan at medium heat, melt the butter. Let the butter continue to cook until a rich golden brown color. Stir continuously so as not to burn the butter – burned butter does not equal brown butter! Feel free to use this site as a guide as well for additional direction on how to perfectly brown your butter.
  4. In a large bowl, combine the hot brown butter with half of the 1 1/2 cup chips (3/4 cup). Mix together until melted and smooth. Add in the brown sugar, egg and vanilla.
  5. Slowly add in flour/oat/coconut mixture, just until incorporated.
  6. Add in other half of chips (3/4) and combine. (Note: I like to add in about 1/2 chips and sprinkle rest on top of batter when in pan)
  7. Pour batter into the prepared pan and spread so it is even. Bake about 15-18 minutes, until a toothpick comes out clean.
  8. When the bars are almost done, make the butterscotch drizzle: Mix 1/4 cup butterscotch chips, brown sugar and water and melt in a saucepan over medium, stirring so not to burn. Alternatively, you could make in the microwave – again, just be careful to not burn it!
  9. Drizzle over the warm bars. Let the bars cool completely before removing them – this will be tough, but it’s so worth it! Enjoy – share some with your coworkers or family 🙂

Red Velvet Oreo Chex Mix {My first attempt at Puppy Chow}

A confession – while I love to bake, I’ve never ever made the infamous Puppy Chow. You know, that Chex Mix that is coated in chocolate, peanut butter and some powdered sugar? I’ve been on a mission to make it and the perfect occasion finally happened – baking with Nicole!

I’ve been hearing a lot about the Red Velvet Oreo cookies and when I finally found them at Target (don’t worry, I went into Target to buy a “few things” and left with a cart full – EVERY TIME), I couldn’t wait to buy them. They came in a smaller-than-typical Oreo box, meaning I used the whole box in the recipe and wasn’t left with leftovers .. okay, besides the 2-3 that I had to try first.

I am not a big Oreo fan – sorry, I just am not. But I do love cream cheese frosting and when I heard the Red Velvet OREOS weren’t as chocolatey and had a cream cheese type frosting, I knew I had to buy a box. And of course bake with them. Want an excuse to try the Red Velvet OREOs? Here you go!

Red Velvet OREO Puppy Chow 

(I added in Valentine’s M&Ms and sent a bag of this to my brother for Valentine’s Day feel free to make it any time of year you can find these OREOs though! – modified from Sally’s Baking Addiction)

Here’s what you need:
  • 20 Red Velvet OREOs, finely crushed into crumbs (divided into two halves)
  • 1 c. powdered sugar (divided into half)
  • 10 cups Rice Chex cereal (divided into two halves – 5 c. + 5 c.)
  • 1 1/4 c. white chocolate melting wafers
  • 1 1/4 c. milk chocolate melting wafers
  • Extra OREOs, roughly chopped (I used probably 4-5)
  • 1/2 c. M&Ms – I used the Valentine’s ones

Here’s what you do:

  1. Measure out powdered sugar and crushed Oreos and mix together. Divide mixture in half – you’ll use half for the white Rice Chex and half for the chocolate Rice Chex.
  2. Measure out half the Rice Chex – about 5 cups. Pour into a large bowl or tupperware with a lid.
  3. Melt white chocolate on low, in a microwave. Stir throughout to make sure you don’t burn chocolate. Pour melted white chocolate over Rice Chex and store until cereal is covered.
  4. Pour half powdered sugar/OREO mixture over white chocolate Chex. Put lid on tupperware and shake until cereal is coated with sugar and OREO mixture.
  5. Repeat the above steps with the chocolate Chex. Melt chocolate on low, pour over remaining 5 c. Rice Chex and coat, pour remaining powdered sugar/OREO mixture over chocolate Chex and shake to coat.
  6. Combine cooled white chocolate and chocolate Chex mix. Add in extra chopped OREOs and M&M. Share with a loved one or friend!

Running in Capris and Red Velvet OREOs

And just like that, another weekend has come and gone in Cleveland. This weekend included some baking with friends, running, wearing capris on my run (it was 45 degrees, people!), trying out some Red Velvet OREOs (you must try these) and an impromptu night out … some of the highlights:

Running with B on Saturday-  it was a little chilly out but the sun was shining and the streets were relatively clear! Anytime I can get outdoors in the winter AND run with B, I’m happy.

Enjoying Mulligatawny at the Souper Market. Each Saturday, B and I plan to get brunch or go somewhere else – but we always find ourselves at the West Side Market and Souper Market for lunch. Not that I’m complaining – a cup of soup and a chunk of bread=happiness. Oh, and an almond milk latte from Rising Star helps!

Margarita(s), chips, guac and bowls at Barrio. The new Barrio opened downtown and B and I got a seat at the bar there Saturday night.

Which was followed by a few drinks at Parnells. It wasn’t a planned night out, but it was a fun time. Especially since I got to try a Crème BrĂ»lĂ©e beer! Have you ever had one? It was good, but a little too sweet for me.

A late night out Saturday meant a later than expected morning Sunday.  Thank goodness I had plans with Nicole to do some Valentine’s Day baking, otherwise I never would have gotten off my couch! As it would have it, it was 45 degrees out (YES 45 DEGREES IN FEBRUARY), so I pulled myself out of bed, went for a run (in capris!!), and found myself just seeing where the road would take me. Some roads were still icy, but since I didn’t have a planned route I didn’t mind. 7 miles later, I was feeling great, and ready for some baking!

Baking with Nicole was awesome. She, myself and her friend Jess made cookies and cream Chex Mix (made with the new red velvet OREOS which are amazing!), black and white red velvet cookies, all while catching up on a Say Yes To The Dress marathon. If that’s not a perfect Sunday (followed by spaghetti and meatballs at my inlaws for our weekly C-Family Sunday Dinner), I don’t know what is!

Almond Thumbprint Jam Cookies

The countdown until Christmas is here! Each year, my family goes into full holiday baking mode, making a combination of new cookies as well as Christmas classics from past years (including Lemon Bars, Tuxedo Hugs, Butterscotch Oatmeal Cookies and more). One of the cookies we do year over year are the Thumbprint Jam Cookies. They’re light, flaky and have just the right amount of jam to add an additional sweetness.

This year, we decided it was time for something new. My mom is a big fan of almond (And so am I!) so we opted to try these almond thumbprint jam cookies. My mom loved them, so I’ll consider them a win – and perhaps a new addition to our holiday cookie mix?

Almond Thumbprint Jam Cookies

Here’s what you need:

  • 1 cup butter, room temperature
  • 2/3 cup white sugar
  • 1/2 teaspoon almond extract
  • 2 cups plus 2 TBS all-purpose flour
  • 1/2 cup seedless raspberry jam

For the glaze:

  • 1 cup powdered sugar
  • 1 teaspoon almond extract
  • 1-2 teaspoons milk

Here’s what you do:

  1. Preheat oven to 350 degrees F.
  2. In a medium bowl, cream together butter and sugar until smooth. Add in 1/2 teaspoon almond extract.
  3. Mix in flour until dough comes together. Refrigerate dough at least 4 hours or overnight. This prevents cookies from spreading!
  4. When ready, roll dough into about 1 inch balls and place on ungreased cookie sheets. Make a small hole in the center of each ball, using your thumb and finger, and fill the hole with raspberry jam.
  5. Bake for 13 to 15 minutes in preheated oven, or until lightly browned. Let cool 1 minute on the cookie sheet.
  6. Make the glaze: In a medium bowl, mix together the powdered sugar, 1 teaspoon almond extract and milk until smooth. Drizzle lightly over cooled cookies.

Yikes. There is suddenly less than one week until Christmas? I know what you’re thinking – that’s plenty of time to get my holiday baking done, right? Well, okay … it probably is. But if you’re looking for a sweet treat to make that won’t take too much time so that you still have time for some holiday shopping (or napping) then this one’s for you! This bark is sweet, delicious and takes no time to make (and no oven to preheat). Pack it up in a fun container and you have the perfect hostess gift (it pairs well with a bottle of wine too …. just saying) for a holiday gathering this year.

White Chocolate Oreo Peppermint Bark

Here’s what you need:

  • 1 1/2 cups chocolate chips
  • 1 1/2 cups white chocolate chips
  • 1/2 c. chopped / crushed andy canes (about 2-3 regular ones or 8-10 mini candy canes)
  • 12 holiday (red creme) Oreos, chopped (about 1 cup)
  • Red/green/white sprinkles (optional)

Here is what you do:

  1. Line a cookie sheet with parchment paper.
  2. Melt milk chocolate chips in a microwave-safe bowl. Mine took about 1 minute 30 seconds to melt and I heated them up at 30 second intervals, stirring after each Pour onto parchment paper lined cookie sheet and spread flat with a spatula.Let cool for at last 10 minutes or until hardened.
  3. Add white chocolate chips to a microwave safe bowl and melt like you did with the chocolate chips, stirring about every 30 seconds. Pour over chocolate layer and spread to the edges of the milk chocolate. Sprinkle with chopped candy canes, chopped Oreos and sprinkles.
  4. Chill until set, then break into pieces enjoy!

Peanut Butter Fudge Caramel Bars

Just in time for the holidays, I’m excited to share with you a recipe that is delicious and perfect for peanut butter and chocolate lovers.

This is not realllllly a holiday recipe, but you can dress it up with red and green and then it’s the perfect for the holidays! It’s not difficult to make but it IS somewhat time consuming because it’s a few layers. But I promise it’s worth it because it really is that good.*

Peanut Butter Fudge Caramel Bars

Here’s what you need:

For the cookie layer

  • 1/2 c butter (1 stick)
  • 1/3 c granulated sugar
  • 1 c flour

For the peanut butter caramel layer

  • 30 caramels, unwrapped
  • 3 Tablespoons peanut butter
  • 2 Tablespoons heavy cream

For the peanut butter fudge layer

  • 1 1/2 c. chocolate chips (I ended up using about half semi-sweet and half milk chocolate)
  • 2 Tablespoons peanut butter
  • 1/2 c. candy topping – I used peanut butter M&Ms that were red and green

Here’s what you do:

  1. For the cookie layer: Preheat oven to 350F. Line an 8×8 in. pan with foil and/or spray with cooking spray. Creaming the butter and sugar with a stand mixer until fluffy. Slowly stir in flour. Press into the bottom of the prepared pan. Bake for 18 minutes until it starts to slightly brown. Cool for at least 20-30 minutes before continuing.
  2. For the peanut butter caramel layer: Mix caramels, peanut butter, and heavy cream in a pot over medium to medium low heat. Stir until smooth and melted. Carefully pour on top of cookie layer. I used a spatula to evenly spread on top of cookie. Chill at least 15 minutes before adding chocolate peanut butter layer.
  3. For the chocolate peanut butter layer: Melting chocolate chips and peanut butter together in the microwave for about 45 seconds. Stir until smooth and peanut butter is incorporated and pour over caramel layer. Again, I used a spatula to spread evenly and carefully. Top with candy of your choice – I use red and green M&Ms and sprinkles to fit within my holiday theme.
  4. Chill bars until completely firm; I chilled mine in the fridge for a few hours and then let sit at room temperature before cutting.

Pumpkin Bread

As you may realize, I haven’t had enough time this fall to get in all the pumpkin baking I typically do. Right now, all I’ve done is make pumpkin snickerdoodles – they were the bomb by the way if you haven’t made them, it isn’t too late! But knowing that the unofficial end of pumpkin season is coming to an end soon, I knew I had to have one last pumpkin baking hurrah.

It was a cold evening so I was in the mood for some baking (who am I kidding .. it could’ve been 90 degrees and I’d be in the mood for baking…). I opened my refrigerator and my freezer – and I had only 1/2 stick of butter left for baking. Half of a stick! That narrowed down my baking choices. Thankfully, I remembered I had torn out a few (and pinned of course) pumpkin bread recipes that called for little-to-no butter. And that’s what I decided to make.

Oh yeah- this turned out SO good that I made it twice. TWICE. That’s four loaves! Get on it before pumpkin season ends!

Pumpkin Bread 

(Recipe is slightly modified from a few recipes I had on hand)

Here’s what you need:

  • 3 1/4 c. all-purpose flour
  • 2 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp cinnamon
  • 2 tsp nutmeg
  • 1 tsp ground allspice
  • 1 tsp ground ginger
  • 3 c. granulated sugar
  • 4 eggs
  • 1 1/2 c vegetable oil
  • 2/3 c. water

For the glaze:

  • 1 Tablespoon melted butter
  • 1 Tablespoon sugar
  • 1 tsp. cinnamon
  • 1/2 tsp. nutmeg

Here’s what you do:

  1. Preheat oven to 350 degrees F.
  2. Mix together dry ingredients in a large bowl – flour, baking soda, salt, cinnamon, nutmeg, allspice, ginger and sugar. Place a well in the middle, this is where you’ll insert your wet ingredients.
  3. Mix together wet ingredients – 4 eggs, beaten, with canned pumpkin, oil and water. When mixed well, pour into the well of the dry ingredients.
  4. Mix everything together with a spatula or wooden spoon – do not overmix. Mix until all ingredients are just combined and dry ingredients are wet.
  5. Pour into to greased loaf pans – I used two 8 1/2 x 4 1/2 x 2 1/2 sized pans. Bake at 350 degrees for about 65 minutes or until toothpick inserted in the center comes out clean.
  6. Cool done loaves from the oven for about 5 minutes. While still warm, pour glaze over top and use a spatula to spread evenly if you want the top to by shiny. To make glaze, whisk together melted butter, sugar, cinnamon and nutmeg.

Variations – I made two loaves as normal. With the next batch, I added white chocolate chips (not too many- maybe about 3/4 c) to one loaf and then finely chopped pecans to the other loaf. Yum!

I’m Totally Okay with Eating on the Floor Sometimes

We’re back! We were back in Cleveland this weekend which meant I had a great time catching up with friends, hitting up some local places and of course getting in some baking time 🙂 (I know, I’m addicted)

Seriously, it as such a great weekend – a little working out, a little baking, a little relaxing and a little hanging out with friends – all parts for a perfect few days off from work.

Friday night started out at the Cleveland Boxing Invitational! B is on the associate board for the Greater Cleveland Sports Commission and this year was the inaugural boxing event, a fundraiser, held inside Tower City. It was so cool to see the indoor mall all decked out for the event, including a boxing ring! I don’t care too much for boxing, but it was fun to be at the event with everyone.

Saturday morning I sat on the couch for a while debating whether or not to go outside for a run or just stay inside and cross train or use the dreadmill. The weather looked pretty outside with blue skies – but it was in the low 30s (colder than it had been in a while) and we had gotten some snow on Friday so the sidewalks looked pretty treacherous. I finally decided to get over myself and pull out my Yaktrax, put on my ProCompression socks, and go outside. I’m SO glad I did – I put on a new playlist, made it for 5+ glorious miles and smiled nearly the whole way!

Saturday afternoon/evening was my monthly Ladies Craft Beer Society meeting – once a month we get together and over craft beers try a new craft. This month? Coasters at Platform Brewery!

Sunday was pretty perfect in my book. I woke up somewhat early, got in an easy workout (2 miles on the treadmill and then 50 minutes elliptical plus free weights and abs), then did some baking (pumpkin bread!), food prep for the week and watched football.

After some cooking and baking, the weekend ended with an easy dinner – takeout Chinese AND sushi. I hot some great shrimp wonton soup, sashimi and a rainbow roll. And I may have eaten it, on the floor, while watching old episodes of the Walking Dead (no judgement).

Pumpkin Chip Snickerdoodles

I love baking with pumpkin. Surprise right? But something happened this year. Perhaps our fall foliage vacation? Perhaps life got busy? Who knows – but this is (gasp) my first pumpkin recipe this fall. Shocking, I know – usually by this time of year I’ve made some pumpkin blondies, pumpkin granola, pumpkin biscotti and/or some sort of pumpkin scone. Oh well. Guess I have some catching up to do!

Even if this is the only pumpkin cookie recipe I make this year – I’d still declare it a good year. These pumpkin cookies are soft (as a pumpkin cookie should be), have the perfect amount of spice (in the batter and also thanks to the cinnamon-sugar coating – they are snickerdoodles after all!) and the pumpkin spice chips are OH so good. I made a batch and they somehow quickly disappeared … guess I know what to do with the remaining can of pumpkin I have!

Pumpkin Chip Snickerdoodles

Here’s what you need:

  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 teaspoons vanilla extract
  • 3/4 cup pumpkin puree
  • 3 cups  all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 TBS ground cinnamon
  • 1 teaspoon ground ginger
  • 1 teaspoon allspice
  • 1/2 teaspoon nutmeg
  • 1 cup pumpkin spice chips (I found these beauties at Target)
  • For rolling: Approximately 1/2 cup cinnamon-sugar mixture (I keep this on hand but if you don’t have it, mix 1/2 cup sugar with 1 TBS cinnamon)

Here’s what you do:

  1. Melt the butter in the microwave. In a medium bowl, whisk the melted butter, brown sugar, and 1/2 cup granulated sugar together until no brown sugar lumps remain. Whisk in the vanilla and pumpkin until smooth. Set aside.
  2. In a large bowl, sift together the flour, salt, baking powder, baking soda, cinnamon, ginger, allspice and nutmeg. Set aside.
  3. Combine melted butter with granulated sugar, brown sugar, vanilla and pumpkin puree. Mix well so that batter is smooth and no lumps from the sugar remain. Slowly pour wet ingredients into the dry flour mixture and mix together by hand with a spatula.
  4. Fold in pumpkin spice morsels.
  5. Cover the dough and chill for at least 20-30 minutes, or overnight. Believe it or not, I made my dough at night and chilled the dough while I slept.
  6. After dough is chilled, preheat the oven to 350F degrees. Line a cookie baking sheet with parchment paper.
  7. Roll the dough into balls, about 1-2 Tablespoons in size. The dough will be sticky! Roll the dough balls into cinnamon-sugar mixture. Place on baking sheet.
  8. Bake the cookies for 8-10 minutes. The cookies will look underdone when you take them out of the oven – this is okay! You don’t want a dry pumpkin cookie.
  9. Let cookies cool for at least 15 or so minutes. They taste even better a day  (or two) after baking!  Mine made about 36 cookies.
